greek here! there is no 100% "recipe" for pita gyros. there are many ways to make a pita! the most common is pita bread, meat (usualy pork or chicken), tomato, french fries, onion, tzatziki, tomato sauce. thats my local area's recipe. ive seen with feta, salad, mayonese, mustard and cucumber. ofcourse u can choose what u want it to has inside! U did a nice job there french guy! looks tasty :) bon apetit!

As a girl told you below, we use vinegar in Tzatziki. No lemon juice. In Greece when you say "vinegar" it only means this red strong one that we're using drops of it. Any other type of vinegar got popular only the last decade or so in Greek houses. Traditionally we had only one vinegar. The red one. Also an advice that i can give you is that we squeeze extremely good the cucumbers to take out of them all the water (better put the cucumbers in a fabric and squeeze) so the Tzatziki doesn't get watery. Nice one. Looked good. It reminded me of when I was a child, we always made "shawarma" from left over roasted leg of lamb. We'd wrap it in pita bread with shredded onions, tahini and sumac.

Amazingly crispy homemade Schnitzels and delicious goulash (the thick one with rice and the soup version) my uncle cooks everytime we go to Slovakia, great memories, plus he's a very good cook.

I really do agree with that quote. As someone from California that moved almost across the country, i cook a lot of food that remind me of the people who cooked it, it's like a coping mechanism i guess, and you never forget those people either :)

From my time in Australia it would have to be the Aussie pies and from Brussels the boudins noir hotdogs during the market days :-D

I think you'd get closer to gyros meat if you take those lamb leftovers, pick them apart, and do a quick roast/fry on them(i know about double roasting/frying not being healthy, but who cares :D ). Greeks also like to add french fries to gyros, which i thought is unnecessary, but they make dish fuller. They are also crazy about ketchup and mustard on it, which again i thought is unnecessary, but when i finally tried it, it tasted really good and it made gyros much more moist. Anyway, great job again
I love yiros' but I am sometimes put off by the garlic in the tzatziki. I know garlic is good for you, but how much should you use, or do you have to have it at all?
next time u make tzatziki, drain the cucumber of its water (just squeeze it out after grinding it, u can also remove the seeds beforehand) and put some dill in there... voila, amazing tzatziki (although it should be obvious, but just in case: use yogurt with at least 10% fat) most importantly: NEVER STIR IT AFTER PUTTING IT IN THE FRIDGE. just remove the amount u need from the top, assuming u make a lot of it (u can keep it in the fridge it for at least 2-3 weeks no problem)

+Alex French Guy Cooking actually i am certain :P this was my mistake the first time i made a tzatziki sauce :P white wine vinegar a small teaspoon and little less is enough for the amount you have made at the video ! the vinegar is what it gives the tzatziki this awesome flavor ! althougt in my opinion you should try the tzatziki to see how much vinegar you like to put in ! you can also check akis petretzikis video with the tzatziki recipe he put it too ;) est ce que tu peux preparer un video avec la recipe original des croissant au beurre s il te plait ! merci beaucoup :)

I love yiros' but I am sometimes put off by the garlic in the tzatziki. I know garlic is good for you, but how much should you use, or do you have to have it at all?
No you don't have to use garlic, put in some chopped fresh mint or dill instead.

next time u make tzatziki, drain the cucumber of its water (just squeeze it out after grinding it, u can also remove the seeds beforehand) and put some dill in there... voila, amazing tzatziki (although it should be obvious, but just in case: use yogurt with at least 10% fat) most importantly: NEVER STIR IT AFTER PUTTING IT IN THE FRIDGE. just remove the amount u need from the top, assuming u make a lot of it (u can keep it in the fridge it for at least 2-3 weeks no problem)

we actually put some vinegar in tzatziki not lemon i think you can also try the vinegar way :) U did a nice job there man ! très délicieux :)

+Alex French Guy Cooking actually i am certain :P this was my mistake the first time i made a tzatziki sauce :P white wine vinegar a small teaspoon and little less is enough for the amount you have made at the video ! the vinegar is what it gives the tzatziki this awesome flavor ! althougt in my opinion you should try the tzatziki to see how much vinegar you like to put in ! you can also check akis petretzikis video with the tzatziki recipe he put it too ;) est ce que tu peux preparer un video avec la recipe original des croissant au beurre s il te plait ! merci beaucoup :)
