    greek here! there is no 100% "recipe" for pita gyros. there are many ways to make a pita! the most common is pita bread, meat (usualy pork or chicken), tomato, french fries, onion, tzatziki, tomato sauce. thats my local area's recipe. ive seen with feta, salad, mayonese, mustard and cucumber. ofcourse u can choose what u want it to has inside! U did a nice job there french guy! looks tasty :) bon apetit!

    I am 50 years old now and like to try all foods of any culture. I grew up in Nashville, Tennessee (USA) and even there we had a Greek restaurant when I was young. Not many Greek people but a Greek restaurant. My family always preferred local diners over chain places and we liked 'The Grecian Inn'. it wasn't the most authentic but it did teach me to try foods of other countries. You make great tutorials! Thanks for your hard work.

    Amazing, but didn't expect any less! I would have to say that my fondest memory growing up would be the smell of my mothers homemade tortillas in the morning.
    Always made with chorizo con papas served with two over medium eggs...She is the reason for my love for cooking for my loved ones.

    This reminds me of the first time I had gyros on a Greek Island... which randomly had french fries in it! Definitely a memory I'll never forget!

    I've seen dozens of videos of people trying to make Greek things. You are of the ones that put the most efforts to make it look and taste as Greek! Mad props mate! As a girl told you below, we use vinegar in Tzatziki. No lemon juice. In Greece when you say "vinegar" it only means this red strong one that we're using drops of it. Any other type of vinegar got popular only the last decade or so in Greek houses. Traditionally we had only one vinegar. The red one. Also an advice that i can give you is that we squeeze extremely good the cucumbers to take out of them all the water (better put the cucumbers in a fabric and squeeze) so the Tzatziki doesn't get watery. As yours got :P

    Know what... Brazil has lots of different cultures inside the same country, but it must be really awesome to imerge in a different country just few hours away! I saw once a guy here who serves a homemade mint mayo with lamb cuts, this must be insane in a recipe like yours!

    Nice one. Looked good. It reminded me of when I was a child, we always made "shawarma" from left over roasted leg of lamb. We'd wrap it in pita bread with shredded onions, tahini and sumac.

      1, lamb is not common for greek to eat
      2, they werent fond of garlic
      3, in ancient greece they were not putting things in their "bread", so i have some points there unless you are talking about pimp my stolen greek food show

      1,In Greece there are infinite lambs and sheep and they have a very large amount of consuption.
      2, you are right ,they weren't font of garlic,also they prohibited it.But tzatziki was originated in Greece.
      3,In ancient Greece,in each meal ,3 things were essential.Wine,Bread,and lots of vegetables,if they were going to eat meat they would combine all that staff together.So...Have a nice day Sir.

    Amazingly crispy homemade Schnitzels and delicious goulash (the thick one with rice and the soup version) my uncle cooks everytime we go to Slovakia, great memories, plus he's a very good cook.

      ***** Mine are not as good as my uncle's, but just like "viande pannée" (flour, egg, breadcrumbs, I generally add rosemary above the salt and black pepper), he always uses chicken or pork that he flattens but not too much, the breadcrumbs he uses must be different from the Maïzena and he cooks it in A LOT of oil, I suppose those two are what makes the real Schnitzels different from the typical "viande pannée".

    Wonderful! Loved the video and recipe.
    A personal variation: I always add chopped mint to my tzatziki, and chopped parsley to the onion with paprika for the gyro.My kids love tzatziki with their fries.

    I really do agree with that quote. As someone from California that moved almost across the country, i cook a lot of food that remind me of the people who cooked it, it's like a coping mechanism i guess, and you never forget those people either :)

    Looks soooo tasty. One of my favorite food memory is when I stayed with a French family, and on the first day I arrived, the french mommy baked a warm quiche lorraine for dinner. Très délicieux!

    I'm an Indonesian who grew up in Australia, lived in Bruxelles for 8 years and currently resides in Malaysia. I've so many food memories that I don't even know where to start, but I'll try :) I love Indonesian food (duh...) but my absolute favourites are brain curry ( yes, you read that correctly) and crispy fried Sundanese fish with super hot chilli paste. From my time in Australia it would have to be the Aussie pies and from Brussels the boudins noir hotdogs during the market days :-D

    Huge slices of rare roast beef, roast lamb, or venison with lots of meat-juice gravy, yorkshire pudding, colcannon, fresh buttery rolls, and either goosberry or treacle tart with custard sauce for sweet..served with lots of hot strong tea sweetened with honey and lemon for adults and lemonade or orangeat for children. Sunday family dinner in Harrogate, Yorkshire England. The precious memories of childhood.

      ***** I live in Berlin now, but I come from the northern Germany. We used to make trips to Husum and bought fresh cooking shrimps right from the fishing boat. A taste I'll never forget :)

    Super recette Alex, moi aussi je suis un fan inconditionnel de la Grèce et de sa culture ! Et je n'ai pas mangé de pita depuis presque 10 ans :'( Je vais essayer cette recette asap, il n'y a que pour le pain Pita que je ne suis pas sûr de moi (ma tentative de faire des Cheese Naan s'étant soldé par un échec calamiteux).     I eat Gyros everyday whenever I traveled in Greece :) this July was in Rhodes. Alex should try making the spinach + feta pastry, it will fit in your obsession of layers + layers+ of crispy pastry

    I think you'd get closer to gyros meat if you take those lamb leftovers, pick them apart, and do a quick roast/fry on them(i know about double roasting/frying not being healthy, but who cares :D ). Greeks also like to add french fries to gyros, which i thought is unnecessary, but they make dish fuller. They are also crazy about ketchup and mustard on it, which again i thought is unnecessary, but when i finally tried it, it tasted really good and it made gyros much more moist. Anyway, great job again

    I love yiros' but I am sometimes put off by the garlic in the tzatziki. I know garlic is good for you, but how much should you use, or do you have to have it at all?

      No you don't have to use garlic, put in some chopped fresh mint or dill instead.

    next time u make tzatziki, drain the cucumber of its water (just squeeze it out after grinding it, u can also remove the seeds beforehand) and put some dill in there... voila, amazing tzatziki (although it should be obvious, but just in case: use yogurt with at least 10% fat) most importantly: NEVER STIR IT AFTER PUTTING IT IN THE FRIDGE. just remove the amount u need from the top, assuming u make a lot of it (u can keep it in the fridge it for at least 2-3 weeks no problem)

    Salut Alex, I am big fan. Recent one though, but still a fan :) Any chance you show us, if not already, what is the secret behind the Cannelés Bordelais? I had them in Bordoeux and they are so addictive, not sure whether there is a cheat to somehow make then at home. Merci!

    we actually put some vinegar in tzatziki not lemon i think you can also try the vinegar way :) U did a nice job there man ! très délicieux :)

      +Alex French Guy Cooking actually i am certain :P this was my mistake the first time i made a tzatziki sauce :P white wine vinegar a small teaspoon and little less is enough for the amount you have made at the video ! the vinegar is what it gives the tzatziki this awesome flavor ! althougt in my opinion you should try the tzatziki to see how much vinegar you like to put in ! you can also check akis petretzikis video with the tzatziki recipe he put it too ;) est ce que tu peux preparer un video avec la recipe original des croissant au beurre s il te plait ! merci beaucoup :)

      You can make it with pork, as Greek usually use pork in the gyro.
