Thank you so much for posting an Einkorn recipe without sourdough! Some of us get physically ill from it and if the goal is to get better and not worse, we need to incorporate choices custom fit to our own constitutions and i appreciate an Einkorn bread recipe without having to have a sourdough 😊

Hi there! I've never personally milled my own einkorn (I use the Jovial brand pre-milled), but my mom does and she didn't think it would make much difference. She's never tried it with this recipe, though. Hope it turns out well for you! :-)
Have you tried milling your own einkorn berries? I was wondering because I have einkorn berries and was wondering if it was the same as store bought einkorn flour. Your challah looks delicious.

Ooh, I'm sorry that happened. If it over-rises it can lose its shape. Be sure the place it's rising is not too hot and you don't leave it for too long. Also keeping the braid tight enough while forming it makes a difference. The looser it is the more is will lose shape. If you're having difficulty getting it tight you can add a little more flour while you're braiding. Hopefully that corrects the problem! Einkorn dough is definitely more 'delicate' and floppy than regular flour.
I'm sorry to hear that! Did you brush it with the egg wash just before baking? That helps give it a golden color. Also making sure it bakes long enough - I tend to go by color and sound when tapped on the bottom, but temping it with a thermometer can also be helpful.

I love the simplicity of this recipe and the flavor is good, but my bread lost its braid and flattened out! How did you keep the shape?
