Adding coconut milk to the taro congee is a reaLLYY good idea!! In Malaysia also have a dessert similar to your taro congee called bubur cha cha (literally translated into "cha cha porridge!!"). Its base is made with pandan leaves and coconut milk, and it's filled with taro, purple yam and carrots. It's warm and comforting, and so very good. You should defo give it a try! :)

That taro congee is super similar to what we have here in the Philippines! You should definitely try adding plantain bananas, jackfruit, tapioca pearls, and coconut cream! It's really good and comforting.

i made cinnamon sugar flower buns the other day bc i didn’t have enough spring onions for all of the dough and they were soooo pretty my roommates loved them 😌

In India we have pancakes called chiila they are made up chickpea flour or gram flour , we use semi watery base of chickpea flour and add spices like turmeric , salt , red chilli powder , black pepper and cumin then we mix it all up then its upto you what you want to add in your pancakes but people usually add chopped onions , chopped chilli and chopped tomatoes . Then we eat the chiila with mint chutney or mango pickle . We also eat taro root by stir frying them in mustard oil with spices . There are actually so many vegan and vegetarian food options available in Indian cuisine . I would love to see you try them out Leah !
