If you were going to buy a budget smoker grill combo would the Char-Griller or Oklahoma Joe be a good option?
My first smoker wasn't very expensive. I had an Old Country Trans Pecos it was a great pit under $400. Got it at Academy.

Is there another cut that isn't mostly fat that you could make with this recipe?
I’m sure you could substitute the slow smoked pork belly for any leaner, grilled pork chop to get a rough approximation of this outcome. I’d imagine if you were to grill a tenderloin, slice it and serve this salsa on top you’d have a pretty damn good meal on your plate 👍
