      肥丁呀!我记得我小时候问我外婆,她以前没有味精的时候用什么提鲜,她说了有母鸡。但是应该不是这样研磨成粉,我更倾向会不会是蒸鸡,或者和生蚝?这个实验我一直没有做。你有没有不一样的想法?

    其实工业实用粉剂制作过程也大体相似,都是烘干脱水,打磨。只不过量太大了给人一种很不天然的感觉。当然为了提高保质期可能会添加一些抗氧化剂,但是抗氧化剂也不全是有害的,严格来说维生素c,还有花青素都能算是抗氧化剂,只要剂量不超标防腐剂也是绝对安全的。而且自制发酵腌制食品如果不注意器材消毒是超级危险的。
    当然肥丁也是真的厉害:)

    就像鸡精是提取鸡肉和其他蔬菜做的一样,味精是提取昆布做的粉末。但说实话,这堪比工厂的步骤以及无添加的透明手艺真的很值得点赞。超厉害。

      雞粉可以搭配很多不同調味料變化口味

    Wait this is so awsome. We don’t have chicken broth or any broth in general sold at the supermarket here in vietnam so this is super helpful, i dont want to boil the whole chicken every time i want chicken broth and there are also many applications with chicken powder . I also have a question, can you make beef powder as well? I guess it’s much harder since it’s mostly the bones that gave it a delicious taste. I also like to see what is your take on demi glace sauce. Support from vietnam

      沒有化學濃縮的程序
      跟外面買的濃度相差很多
      肥丁口味吃得清淡,搭配醬油等提升鮮味是挺好的
      外面買的真雞肉成粉很少
      主要是鈉和增味劑

      味粉做好之後都是直接料理
      我會把乾香菇沖水洗一洗
      把表面的塵埃沖走
      烘乾剪碎再磨粉

    Thank you for sharing, too bad can't copy and paste to keep , have to hand copy each of your recipe. Too troublesome as in this recipe, we need to make many other types of powder in order to make this chicken stock powder.
