I just shipped a 1/2 lb of dry active yeast, to a friend in another city. He mentioned his desperation of there being no yeast available. I just happened to have a pound in the freezer! I proofed it, it was good, and off it went yesterday via 2-day in a vacuum sealed packet. We all can help each other in so many different ways. He plans to share 1/2 of it with another friend! I like to separate the bulk yeast powder into smaller pouch and vacuum seal it, then freeze it for pretty much indefinitely. I use both Red / Gold Saf Instant Yeast (cost around $15/lb from French), and also Red Active Dry Yeast from Costco - same manufacturer but in Mexico ($5 for 2lbs - so cheap). I like to make dough using Christine Tangzhong method. It’s like a fool proof method to make the bread stay moist, fluffy, and natural method to preserve the bread at room temperature for few days or a week (if it’s not to hot). Of course you can keep bread in the fridge or freezer but I like my bread soft, fluffy and slightly chewy at room temperature.
Btw, if you can’t buy yeast anywhere, you can make your own starter (fresh yeast) by ferment the flour / sugar / water . The process can take up to 3 days or more, but you will have never ending supply of yeast if you keep it in the refrigerator & regularly “feed” it. After all, yeast is considered a living thing. We bought SAF Yellow yeast from walmart for $5.30 last 2018 and it's still good. We stored it in the bottom back of my freezer in it's original packaging with a clip and enclosed in zip lock but we eventually transfered it to a freezer safe jar.

I have been a prepper for 8 years, including storage of bread after freezing it for 24 hrs to stop any weevil infestation. I use a bread maker. With prices now quickly rising (but not always my bread, LoL) and some food shortages (like sunflower oil) happening, I have wondered if it is possible to extend the life of bread yeast beyond the Use By date. I have always used instant died yeast granules in 7g packets (enough for 1 large loaf) which don't seem to store well. Yesterday, I bought a 500g block of Italian "high activity instant dried yeast", marked "Baker's Yeast" (cheap, with a 05.22 use-by date) which I have not opened yet. It is obviously a hard, solid block, not granular, so is different to yours, but I will now open it and follow your testing method. One video advised first mixing yeast with small dough balls, freezing them, then baking them as needed. I will see how things go. We had such a shortage 3-4 years ago, none to be had, and I had to import some from Poland via Ebay. Thank you from the UK.

You've asked a fine question! No -- the yeast granules won't clump together when frozen in a jar or some other air-tight container. I simply spoon out what I need, then return the jar to the freezer. There's really no need to bring the yeast to room temperature before using it. Hope this answer was helpful to you!

Their are running a complete yeast set, it comes with SAF Red yeast which can be stored in the freezer, also a 3-cup airtight acrylic canister and a stainless steel yeast measuring spoon 2 1/4 teaspoon. Regular price $21.85 but on sale right now for $19.85+ shipping and tax. Oh yes!! KA can be expensive but I Wait for they specials.

Why would you pay so much for something sells for $12 Active in the product name means the yeast has to be 'activated' before use, as opposed to instant yeast that can be used instantly. Instant yeast is the better option, the lifespan is much greater, a decade or more in the freezer.

You are correct. I filmed this video during peak COVID, when neither yeast nor flour could be found at any market. Consequently I purchased from a "scalper" on Amazon!

Store your yeast in the freezer. I have some that is 8 years old in the freezer and it's still good.

Just a freezer- safe plastic container like Tupperware. I keep it in the door of the freezer in my refrigerator.

Question: I have active dry yeast in their original single loaf packets. If I store them in the fridge or freezer, should I still need put them in a ball mason jar? Or in a ziplock bag? TIA.
Hi Carrie - No need for a jar or zip-lock bag if packet of yeast has not been opened. Just refrigerate or freeze as is.
What is the purpose of the sugar?
I added sugar simply to speed up the activation process. Otherwise, sugar is not required for bread-making.
