Normally the mooncake can be chilled in the frdige for at most 3 days. The skind will turn hard after 3 days, try to eat them up in 3 days. And please do not dust too much cooked glutinous rice flour on the mooncake while moulding, it will make the skin hard.

Hi Lisa, like this snowy mooncake and other mooncake making. However, I have some issues with the ratio of the ingredients. Could you please tell me what kind of milk you used in your recipe as my mix of dough are much thicker than yours (I've added another 100ml of milk. Total milk is 285ml but still looks too thick to use).Thanks!
I use fresh full cream milk. As long as you don't use the coconut milk, I don't think your mixture is thick because of the milk, it is possibly due to that you use the wrong flour or starch. Try it again and wish you could make it.

I've tried exactly per your recipe again (50g Glutinous rice flour, 40g Rice flour, 20g Wheat starch, 185 fresh milk, 30g caster sugar and 20g vegetable oil). Unfortunately, the result is the same - the dough is too thick to use (can not even to stir all mixed ingredients like moving liquid like yours before steaming)! Not sure where it goes really Wrong!! :(((

Did you add enough rice flour ? If you add too much glutinous flour, it will be pretty soft and sticky. Add some rice flour to make it a bit firm.

真是不知道啊,从来没有这种涩的感觉,因为冰皮的构成很简单,主要就是糯米粉,粘粉和澄粉,这三种粉混合的面团应该不会有这种感觉。
