These look so delicious. I love almond in croissants and just bought almond paste thinking that’s what I needed to make “Bear’s Claws”. Oops. I do have some almonds and hazelnuts. I need to Blanche some hazelnuts for a biscotti I am making for my mom. That one has chocolate biscotti batter with blanched hazelnuts and semisweet chocolate ground up a bit and mixed into the dough. Sooo good.

Brown butter is one of millennials/gen z’s “popular ingredients. To them it’s new and belongs is almost everything. It makes me giggle as my children all use it and always say it’s such and such with browned butter. I adore it!! It’s sweet like when they get a new outfit and they’re like look at this, and I think oh yes I wore that too, but say you look lovely!!
I've never understood why almond cream, or any nut cream, is synonymous with frangipane everywhere outside France. A true frangipane is a custard, and is traditionally made with almond cream mixed with pastry cream. If it's not a custard, it's not frangipane.
Carla's right! Fruit juice (such as juice from peaches, apricots, pears, or oranges) are great alternatives. Coffee or coffee extract is also an option as well!

Yes! That should work just fine. You may have to adjust cooking times slightly, or just keep a close eye on the cake when it's in the oven! 😊
