    Mushroom butchery. The gills are very flavorful and mushroomy, not muddy. The stems are a little firmer than the cap, but still delicious. If the dark color is bothersome, buy the white ones and don't use these.

      I have to disagree ive accidentally included a full portobello mushroom in my soup with the gills on and it ruined the soup. They made everything taste rubbery and muddy like there was some unidentifiable goo in the bottom of every bowl. Luckily you keep the gills and I can discard them and everyone can be happy ;)

    I've found most of the stems really good and flavorful, specially in stroganoff where they become very tender or baked inside puff pastry, don't waste the stems!

      They also make a great stock. I pop the stems in the freezer until I have enough to make stock.

    you can eat the stem, slice very thin, great with Asian stirfry soups, lomein, mooshu dishes, etc, even in a nice cream sauce, or a quick fry, top over lettuce with drizzle balsamic cut with lighter wine and oil.

      not just removing the gills but also the stem which is completely edible. Chopped up and added into stuffed mushroom recipe gives it more flavor. Is this chef sure she knows what she is doing?

      I've always removed the gills especially if I'm preparing "stuffed mushrooms". I figure there's plenty of other things spinach ie to make up for those few little gills that may have some residual dirt in them. But...everyone does their own thing, it's all good:)

    these make great substitutes for meat patties in hamburgers. Gills taste fine but hold a LOT of moisture when marinated (balsamic vinegar + Olive oil + garlic). I remove the gills because of moisture.

    I eat the whole mushroom. I cook them down in a little butter and drain off the water or liquid from the mushroom, or cook it until the liquid cooks away. I usually cook them with sweet onion or vidalia onions. After I drain off the liquid, I add more butter. YUMMY!

    Oh and stems, that's the other thing. Yes, sometimes they can get old and woody, but this is not always the case. And if they are still fresh and good to eat, it's a terrible waste to throw them out.

    The stem will come off easily by rocking it back and forth once or twice while gently pulling. A soft brush will remove any dirt left on top of the mushroom without wetting it. (There are brushes made specifically for cleaning mushrooms.)

    I love that it has gills. Who knew it gives a muddy flavour. I agree something is off putting when I would eat them. It was the gills. Wow. Great information.

    i eat gills and all i also wash my mushrooms some say not too but they grow those things in manure Alton Brown says wash them

    you don't need to discard the stems either, they're fibrous sure, but still delicious, the fact that it has a different texture from the cap doesn't mean you shouldn't eat it

    She's crazy! That 'muddy'/earthy flavor, is the best part of mushrooms. Put some garlic and evoo, cook it and eat all of it xD

    I think this video needs a re-do. Update it so that the stems are not thrown away and the gill is not wiped away. Both are unnecessary.

    IN ANCIENT Egypt the Pharaohs prized mushrooms as delicacies. They became the preserve of the royal family. The Romans called mushrooms food of the gods and served them only on special occasions. The ancient Greeks held mushroom feasts and believed that mushrooms empowered their warriors for battle.

    I actually don’t agree that the stems are woody and not edible. You can always eat them. Cut them up thinly and/or finely and you can eat them. Don’t throw it away.

    What I'd really like to know, is this:
    "Portobello" mushrooms are nothing more than common Agaricus bisporous mushrooms.
    So how come they cost twice as much when labeled "portobello" as they do when just labeled "mushrooms"? --($7/lb. for "portobello" versus $3.50/lb. for "mushrooms", at Albertson's, for example.)
    If I call albacore tuna, "fillet of Thunnus alalunga," can I get 12 bucks a can for it?

      Sure thing. Unregulated capitalism lets you take advantage of others' ignorance. The food industry is a particularly rich mine, as there are so many pretentious people who try to look special by way of their food choices or supposed know-how on preparation.

      You do what you like. Suggestion, try them both ways, with and without the stems and gills, and proceed from there. Like or dislike, whichever way, YOUR decision not the comment section.

    I think the skin of the mushroom is also giving a woody smell too. Need to scrape them off till the mushroom turns white and skinless. That way it will be smell-less

    I think she means dessert spoon. A tablespoon is too large and will likely break the perimeter. You might even need teaspoon to deal with the outermost ring. When making stuffed mushrooms, it's best if you can keep the whole mushroom intact. The gills must go. Otherwise the dish is contaminated.

    i got very freah port, the gills so beautiful, thought it’d be a waste to scrape, so i left them on. same with stems, only chop the very bottom and leave some on. after sautéing, the stems not hard at all, and the gils are edible. not woody, at least not to me.

    I wonder if that "muddy flavor" is actually something people like (or have even grown to like) about the flavor of portobellos? Could removing them make them taste "bland"? Only one way to find out. Half-removed gill taste test!

    Who started this nonsense with removing the gills?? I've been popping into this several times recently, though exclusively on American food blogs. Don't touch the gills, and whoever says otherwise, just ignore them. It's silly.

    No the gills do not give a muddy flavor. And the stems can be chopped, cooked down and added to the stuffing. It’s a waste to discard them.

    It's wild paying extra to eat a cultivated superflora of a Fungus and complaining about a little dirt and the gills under the cap. It's literally more flavour, just wash them properly and enjoy.

    This is one food prep video that I don’t agree with yes the cleaning and choosing process as far as getting rid of the gills NO i don’t agree with this it is not muddy its very flavorful the stems are a litter firmer I wouldn’t say har but compared to the cap yes firmer but completely edible

      Because mushrooms yield water when heated, using water to clean them will increase the amount of water, therefore a "dry clean" method is preferred. Hopefully it makes sense to you :)

      You can wash them. But do it quickly. Mushrooms have quite a large amount of water in them already. Washing them quickly help keep down any additional water they may take in. It only adds time to the amount time in cooking so that any natural occurring water plus what may have been added in the washing can evaporate.

      I think they should be wiped instead or rinsed because mushrooms are very porous. They would absorb a lot of water when rinsed that could make them kind of mushy depending on how you're going to cook them later.

      That's why you shake out the mushrooms or when you cut them up that opens up the gills, either way, water is not a problem, mushrooms are mostly water themselves so you can't overcook mushrooms, they can't be mushy unless they're old.

      Not washing mushrooms until clean is one of those persistent rumors that continues forever. And it's totally baseless. Fresh mushrooms are 90-95-percent water. They can absorb very little liquid so wash them a few minutes before cooking until clean. Once mushrooms start to cook they begin losing water content so any little bit of water they may have absorbed during washing is lost in this process.Once the water is mostly gone, then flavors begin concentrating. For me, I dump them in a pan and begin filling with water while shaking them around by hand to dislodge any dirt. Pour off water and repeat two more times.

      +GloriousGavin Probably because she was chucking the stems into the sink rather than keeping them and using them for a secondary purpose (e.g. a mushroom stock).
