My father used to make oxtail birria for special occasions and I though I’d never have it again. This made me a little sad. 3.5 years later, with a little creativity and a whole lot of enthusiasm, I went for it and was go glad I did. This recipe will blow your mind! So I have a question is using white flour absolutely pivotal to these recipes? I followed the recipe in the drumstick video but I used Bob’s Red Mill whole wheat gluten four and the seitan came out really rubbery and it didn’t produce the milky starchy water you noted. So I was curious if you had some insight. Love the videos. :) keep up the amazing work.
The oxtails got me to subscribe! They look great. I have a question though. Have you ever tried putting dry seasonings into the flour BEFORE washing it? I'm wondering how much would be retained if done that way, then also seasonings incorporated the way you normally do.

If using vital wheat gluten, you can skip the washing part. VWG is washed flour.

You can, but the texture will not be as shredded .

looks amazing, but Worcester sauce is not vegan, its not even vegetarian. it contains fish :)
Luckily you can now buy the vegan Worcestershire sauce. I use Annie’s which does not contain fish.
