What wonderful, easy recipes to showcase the flavor of umeboshi! My mother loved eating ume by itself. It was too salty and sour for me, but these recipes use it as a seasoning, which makes perfect sense. The ume butter, particularly, is so versatile! Thank you, Satoshi, for these creative ideas. I love ume boshi. either as it is or as a dressing with mayonaise. Paired with cabbage and (smoked) chicken it is delicious! Vegetarians simply leave out the chicken. I tried it in soup once the ume boshi. They said it was good for you for like after the holidays when you've eaten a lot, but I didn't like it that way. But that was not with chicken. Perhaps I'll try your recipe and give ume boshi soup another try. Ume butter sounds so interesting. You can also make a more Japanese style sandwiches! Seeing you mix ume and butter, I wonder, would it also work with the yuzu kosho?
OMG - umeboshi is way too sour for me. As I watched this video, my jaw hurts from the sourness...😅. Again, Satoshi - love your creation and content. Kudos!
