In today's video I am sharing with you what I eat in a week, where I try new recipes, explore flavours and get prepped for the week ahead. For me sustainable living is always about cooking from scratch where possible, valuing what you own, introducing minimalist ideals by keeping our space free of unwanted items and lowering our waste wherever possible. Zero waste living is something I strive for. Meal prepping for autumn, learning new skills and minimising wherever I can. I hope you enjoy this calm cooking video!

If you cook soybeans first you can batch cook freeze the cooked soybeans and blend in the blender and drink just like that no worry about pulp, the cooked soybean gives an extra creamy texture, and it's more filling.

Funny story: a few years ago, I had (what I thought were) several volunteer squash shoots in my compost. I was so excited, so I planted several of them. Imagine my surprise when, a few months later, I realized they were all actually MINI pumpkins (that we had composted the previous fall) 🎃🤣. OH, and I also love green belly hot sauce! 🙌🏼

Do be careful with squash from your compost. Sometimes, the different kinds of squash like to fertilize each other, and the outcome is not always edible. Learned that from experience.

I make my own yoghurt - my InstantPot has a yoghurt setting which makes it very easy (I make it from cow’s milk so I imagine a non-dairy milk might need a slightly different treatment). Essentially I boil my milk on the first setting, let it cool to around 35C, add my culture (or a few tablespoons of previous yoghurt which you can loosen a bit with the boiled milk) and leave it to inoculate and thicken overnight on the second setting. Obviously I’m not making my own milk, but the Instant Pot reduces the yoghurt labour to about 5 minutes 💚

I loved everything in this one (as per usual) but the pea sprouts, bucket hat, pumpkin curry, and garden moments just took it over the top for me. For the yogurt, I use a yogurt strainer to make a Greek-style yogurt and then freeze my whey to use as a starter. I freeze the whey in ice cubes so that it is ready to go. I use 3 cubes for 64 oz of soymilk. I never buy starter anymore.
I really enjoyed the tone of this video! It felt very casual but still included good information/mentions that made me think of some projects I might like to give a go myself (like growing microgreens/sprouts)

I drink raspberry leaf tea, nettle tea, dandelion tea, and red rooibos tea depending on which phase of my cycle I'm in. Raspberry leaf tea and nettle tea are best for when you're on your period as they can help alleviate some of those PMS symptoms.
If you ever go to Orange County, CA I highly recommend this restaurant!!! I am not vegan or vegetarian but I was blown away with food. Vegan and raw.

Hi Immy you look really happy and your food looks delicious. What would be really helpfull for me is a recipe text in the description or step by step making of the food in the video. I find preparing tofu and tempé quite challenging for example and the way you show it, it seems quite simple but it goes a bit too fast for me I am afraid. Thank you and enjoy the spring in Denver!

Making me miss denver more than i usually do. My fav hike is Maxwell falls in evergreen. Not the hardest but i used to do it nearly every day when i lived there.

I would love to hear an update on how your yogurt turned out! I've been making oat + soy yogurt at home for about a year now and think I've finally gotten it to where I like it. The real turning point for me was learning a trick from Miyoko Schinner to get rid of the potent "Soy" taste - before soaking, put the dried soybeans directly into boiling water for 1-2 minutes. After that, soak as you normally would. It seems like a small adjustment, but the affect it has on the flavor is astonishing.
Also, I agree with you on Lenny's cookies. I always want them to be better than they are, but they always just taste like disappointment...😅

I do not like running, wish I did. I have made myself in the past but my knees really don’t enjoy it. I do, however, climb indoors mostly to challenge my fear of heights and I attend bootcamp a HIIT workout 4 times a week, I walk and I just bought a bike to start touring around. I am 62 and I have grandchildren that also keep me busy helping out their parents with drives etc. as needed. Thankfully I am retired. I enjoy crocheting also. What pattern or video did you use to make your bucket hat? And I enjoy making junk journals for gifts. I also enjoy reading. I don’t enjoy cooking. I’m a vegetarian. I love your videos.

OK… I know this video is about yummy made-from-scratch food and kitchen inspo, but can I just give a wee shout out to journaling? Did I miss it? Yeah to any type of journaling!! Mindfulness journal, bullet journal, gratitude journal, health journal, fitness journal, garden journal… that wonderful connectivity between our brain, thoughts, and hands. And let’s not forget that journaling goes well with coffee, tea, or a snack. There’s just so much to love about journaling. Does this mean you’ll be starting a crochet journal, Immy, or maybe a DIY projects journal? Just a wee suggestion. No matter tho’… I’m looking forward to seeing all your upcoming activities, projects, series, and other cool initiatives. I’m also very excited for Skilled Girl Summer… Whoop!! Whoop!! We call them aquilegias here in the UK 😉 and I hate to be that person but they grow like weeds in my garden and I didn’t even sow any of them 😅 they really are lovely. Mine are already out in flower.
I’m even growing soya this year, which is a first. Apparently we can grow them here now in the UK. Everything has been very early this year but also very, very wet (more so than usual for the UK). This is impacting farmers here so growing your own has never been so important.
Same here with the yogurt been making it for a few months now using a Bulgarian starter. Yes you can use your previous batch as starter for your next. I’ve done this with chickpea curd in an Indian curd pot. I use the instant pot yogurt setting for my soya yogurt overnight.
Have you tried freezing grapes, they’re so refreshing to eat when partially defrosted. Also those cookies, grim, gave me a terrible stomach ache. Too much pea protein.

Liked this one! Found however that the warmup wasn’t substantial enough for the arm exercises later on. Also, it would be great to mention the level of the workouts generally speaking, so that the choice is made easier with a sleepy head in the morning. 😉 (This one was intermediate level in my pov.)

Hey Immy. I've watched you for ages and love the content. Have you considered rain barrels? One way I decrease my impact is to store that water to use in all my gardens. With 2 barrels, I never need to use tap water. I've been amazed. I got mine used from the neighborhood by just asking on a local free share site. Wishing you well and keep up the lovely work❤

Uhh everything looks delicious! I wish I had space to grow veggies, but this year I at least trying to grow some herbs on my balcony. It's still a little bit cold here in Finland, still have some minus degrees at night, so nothing out there yet, but have pots and soil ready :D

Love this video! I adore your content. I’m so curious how your yogurt turned out and if you will be making it again!
I’ve made soy yogurt for a long time (the expense it saves is so huge!), and one tip that has revitalized my yogurt-making in the last year is making the first batch from the CFH starter packet a “sacrificial” batch and freezing almost all or all of it in ice cube trays within a day of making it (I make a second batch from it the next day as well). This is because yogurt cultures are at their strongest right after culturing in the first batch and decrease in strength over time and over repeated re-culturing. Anyone that has tried to make yogurt from a batch that has been in jars in the fridge for a week or more has probably had it turn out much thinner/more watery. Or maybe I’m just obsessed with having very rich, creamy vegan yogurt!
Either way, this allows me to stretch my starter packet purchase over many months of making yogurt weekly, and each batch turns out thick and creamy (I also blend a cup of cashews into the soy milk before heating to more closely match the sugar/protein balance in dairy yogurt that lends itself to the creamy Greek yogurt result). The only thing to note with ice cube cultures is to defrost the cubes quickly before mixing with the heated milk (just sitting at room temperature for no more than half an hour), again because a slow defrost will weaken the culture and thus the yogurt. Anyway there are as many ways to make yogurt as there are sourdough so I hope you have fun with it and come back to it in a future video!
