These healthy protein energy brownie bars are a must-have on hand for a quick snack anytime, pre- or post-workout fuel, or for a quick breakfast. Every ingredient in this recipe is good for you! Try it and let us know how you like it :) If you don't have a food processor, you can still make this recipe by finely chopping the nuts and dates by hand (knife and board or mortar and pestle or even a rolling pin).

    📝 INGREDIENTS:
    • 1 cup mixed roasted/toasted nuts (such as almonds, peanuts, cashews, pistachios)
    • 1 cup pitted soft dates
    • 3 tbsp cocoa powder (dutch-processed is best)
    • 1/3 cup protein powder (optional)
    • 1/2 tsp vanilla extract
    • 1/4 tsp sea salt
    • 1-2 tsp water (or as needed to achieve the right consistency)
    • 2-3 tablespoons dark chocolate chunks (70% or more dark) for melting and topping
    • Optional Toppings: Dried cranberries, chopped nuts, coconut flakes, dried fruit, seeds, sea salt flakes, freeze-dried berries
    ❃ PROCESS ❃
    1. Prepare the Pan: Line a baking pan with parchment paper, leaving some overhang on the sides for easy removal. You can use an 8x10 inch or an 8x8 inch pan or even a smaller sized pan for thicker brownie bars.
    2. Process the Nuts: Add the mixed toasted nuts to a food processor and process until they are finely chopped or chunky as you like.
    3. Add Dates: Add the dates to the food processor with the chopped nuts. Process until the mixture starts to combine and becomes sticky. If your dates are really dry, you may soak them in warm water for 10 minutes ahead of time and then drain before using.
    4. Add Dry Ingredients: Add the cocoa powder and optionally protein powder to the food processor along with the vanilla extract and sea salt. Process until all ingredients are well combined and the mixture is smooth and sticky.
    5. Press into Pan: Transfer the mixture to the prepared baking pan. Use your hands or a spatula to press the mixture firmly and evenly into the pan.
    6. Melt Chocolate: Melt the dark chocolate chunks in a microwave or over a double boiler until smooth.
    7. Pour and Spread Chocolate: Pour the melted chocolate over the top of the brownie mixture and spread it evenly with a spatula.
    8. Create patterns if desired: Use a fork or skewer to create zig zags or wavy lines while the chocolate is still warm.
    9. Add Toppings: Immediately sprinkle your chosen toppings (over the melted chocolate before it sets and gently press down to hold them in place.
    10. Chill: Place the pan in the refrigerator for at least 1 hour to set, or for a quicker set, place it in the freezer for about 30 minutes.
    11. Cut into Bars: Once set, lift the mixture from the pan using the parchment paper overhang. Place it on a cutting board and cut into bars of your desired size.
    12. Store: Store the brownie nut bars in an airtight container in the refrigerator for up to 1-2 weeks.
