That is a pretty big task to travel that far but you could buy a car fridge that cools and heats. A cambro will easily hold it for 2 plus hours and another option is to heat it back up with a Sous Vide. If I was you I would smoke it to 115°, wrap it up tight put it in a cooler with towels, then when you get to your destination, throw it in an oven and finish it off but you will end up pulling it at around 125-127 to hit the medium rare. I always plan for around 30mins per pound but when they are that big they will start to catch up and cook a little quicker at the end. You have 2 options, cut it in half and plan for at least 6-7 hours or run it whole and plan for at least 8. Prime is a large mass of meat and takes a while to get to the center. You can run the pit hotter but you will start to see some greying around the edges. I just ran 2 primes for Christmas totaling 21 pounds and it took just under 7 hours. Good luck!!

My Traeger would not get past 380 so I fired up the weber gas grill to 500 and put the Prime Rib on a grid inside a foil pan. Rotated it twic and when my thermoworks probe hit 130 I took it off. The middle was medium rare but everywhere above was medium at best. It was still tasty and I will have to experiment more with the weber grill for the final sear. Thinking next time take it out of the smoker at 115 and have the weber ready to go and put it right on and pull it at 130. Not gonna upgrade to better cuts until I have this perfected. **** Note - I found one little button of meat surrounded by fat and after I cut away the fat it was quite arguably the tastiest bite in I have ever tasted. @@DeadBrokeBBQ
Sounds like you are forgetting about the carryover too. If you pull it with an internal of 130 it will carry over to a medium. You are only cooking it for a few minutes to crisp up the outside at a high temp. I always pull my prime no matter how I cook it at 125 to make sure it stays at a medium rare. Thanks for the update!

It caught on fire and almost burned me and my next-door neighbor's house. The fire department came and carefully avoided the Prime Rib and snuffed out the fire. The new fence cost me a $1000 and it is a Christmas we still talk about.

No Au Jus packets in the cupboard and all the broth splattered on the floor!!!! Prime turned out fine but everyone was saying "something is missing" hahaha no chitt people!!! ha ha Thanks for watching brother!!

What pellets are you using?
I use whatever is on sale. I don't see a huge difference other than I typically use a hardwood blend. Oak is my favorite! Thanks for watching!
