    -- INGREDIENTS -
    5 ripe bananas
    1/4 cup vegetable oil (coconut oil is great)
    1/4 cup plant based milk
    1/2 cup coconut sugar
    2 tsp vanilla extract
    1 cup plain flour (or gluten free flour)
    1 cup rye flour (or any other wholemeal flour)
    1 tsp cinnamon
    1 tsp baking soda
    1/2 tsp salt
    walnuts (optional)
    -- INSTRUCTIONS -
    pre-heat oven to 180°
    mash 4 banans in a bowl (leave 1 banana for topping)
    add the sugar, oil, vanilla, milk and whisk to incorporate
    add the flour, baking soda, salt, cinnamon, fold till combined
    DO NOT OVER MIX - or the cake will come out gummy
    add walnuts and give it a quick stir (optional)
    pour the mix into a pre-oiled baking tray
    bake for about 30-40min (depending on oven strength)
    cover with foil and bake for another 15-20mins
