Carnivore Diet: How To Cook Steak

- Welcome to the first edition of the Carnivore Cooking Show! What better way to kick it off than HOW TO COOK A STEAK?
It took me years to get comfortable with cooking a steak to perfection. So that’s what I’m going to do in today’s video; so hopefully you’ll save some of that unnecessarily long learning curve (and save many over cooked steaks)!
This format is going to evolve, and i hope to have a legit online cooking show with full studio in the near future. For now, we are going to keep it focused and simple: me showing you how to cook certain animal-based foods so that you have nutrient dense human nutrition ready at all times.
So today’s video shows you ONE method, my current favorite method, for cooking steak. It’s fast, relatively simple, and fool-proof if you follow the steps I recommend.
After the video, I highly recommend you go out and try to recreate this exact formula at home so you can fully retain this technique. Links to each tool will be in show notes.
Cooking steak is easy and hard. And only recently have I felt like I’ve kinda figured it out.
And it took a probe thermometer + really thinking about my technique to finally get down my preferred way of cooking a steak.
This is weird because I’ve watched the food network growing up as well as plenty “cook a steak” RUclips videos. But it didn’t click. There was still this seemingly elusive thing I wasn’t grasping about cooking a steak.
1. Probe thermometer, maybe 2. Or one that has multiple probes
2. 10 inch cast iron skill: amzn.to/2PjVI73
3. Quality avocado oil

5. Quality salt, Wild Pink salt, or my fav, our wild kosher flake salt over at wild foods.co
6. Grass-fed unsalted, say Kerry gold or organic valley or some local butter
7. Foil
8. A Wire rack and sheet pan: amzn.to/2SQo5fs
9. Oven (maybe)

For the meat, let’s focus on a strip or ribeye, my current cut of choice for breaking my fast every single day. Let’s say it’s about 8oz, a typical steak and about 1 inch thick. Thicker cuts use same technique, but you rely more on your oven to finish.
Steps:
1. Your cast iron pan has been preheating on high heat and your oven is set to 250°
2. Present steak 24+ hours before or right before you sear
3. Remove steak from fridge, place in your sheet pan, rub down in salt and if you want spice rub. You can let it sit out for 5-25 mins before doing this, the thicker cut the more it should sit out. For thinner cuts, leave it in fridge and get it in pan still cold since this will prevent it from overcooking it
4. Lightly coat in avocado oil
5. Soon as pan starts smoking, drop steak in so you get a consistent sizzle
6. Set timer for 1.5 mins
7. Knock heat down just a tad, especially if your sizzle is too fast and you are getting smoke. You shouldn’t be getting smoke and you should have a steady solid sizzle. You’ll have to figure this out the more you cook on your range since there are many variables
8. flip after 1.5 mins, you should have a beautiful crust (you can extend this to 2 mins if it’s thicker)
9. Go for 1.5 mins (you can extend this to 2 mins if it’s thicker)
10. Turn your heat down to lowest
11. Take 1 tbsp - 2 tbsp of butter and drop on steak, don’t drop directly in pan just yet since it could burn butter.
12. Grab a kitchen towel or glove so you can take pan and now work it around and tilt it so you can butter baste the steak for about 30 seconds per side
13. Now remove from heat, insert your probe, maybe it’s done, here are the temp ranges i take my out to let it rest:
14. If it still needs cooking, put the pan in the oven at 250°, leave probes in and set alert at desired temp or check every few mins. Once you hit X temp, remove from oven
15. Place steak on rack and cover with foil for 4 mins
16. Grab a cutting board/sharp knife, and slice that bad boy after time is up
17. If you can cut against grain, great, some steaks you cant really do this, so I turn it at an angle a bit. I also don’t think it matters as much with tender cuts since every bite is going to be tender anyways + you can cut pieces down smaller as you are eating it on your place.

Your streak looks perfectly cooked...great job. I understand that if you're doing the carnivore diet, you don't trim the fat because it will slow down the weight loss process. Also on carnivore, they advise that you use butter, ghee or tallow to cook meat, no vegetable oils, which include avocado and olive oil.
If someone is doing carnivore as anti-inflammatory diet, then avocado oil that is pure will still keep inflammation low.
Although for those who can, animal fats are the best. Perso ally, I make plain bone broth (just bones and salt) ND use that in my pans.
You've got me slicing my steak now! Much better, because i don't have to cook "well" anymore!
My mom passed this year, and I knew that I wanted to keep her cast iron skillet. I've never been happier with a pan! Forget "nonstick"; they don't last a year! Keep the cast iron greased, or go with stainless steel, get it really hot, turn down to what you need, and either pan will be non stick!

I'm carnivore and only use butter, Redmonds salt and of course the steak! Your steak does look delicious sans the avocado oil for me!
Ghee would be better to sear with to be honest ;)
I typically cook with ghee and it's delicious.
I cook with animal fat (e.g., pork fat)
I cook with bacon grease.
Something is wrong with me; I use all these! I start with butter, add some ghee, a touch of bacon fat for flavor and richness, and have avocado oil nearby in case I didn't use enough! Usually, the butter is plenty for two steaks (one at a time), using the same one stick of butter! (Plus S&P)
Im not a big fan of steak but I just made a NY strip with this recipe and I cant stop eating it. SO GOOD!

I use ghee to sear my steak.
Alvarado Oil, Coconut Oil, and Olive Oil, is oil from the meat of the fruit. These are not seed oils, which are basically, in "MY" keto opinion, Poison.. I hope this helps.. God Bless.
probably a dumb question here but why the wire rack? If the butter and meat juices get poured back onto the steak, does it still need to drip dry on the wire rack? Or is the rack just to get the steak off the hot pan for its final 4 minutes? Thanks, just trying to understand. Does it over cook the steak just to simply leave it in the skillet with stove off due to residual heat?

When I do mine, I put in duck fat, have the pan super hot sear one side then turn it down and flip it. Let it cook until desired doneness then either put butter on it or take the steak out add some herbs, salt pepper reduce it a little and have a lovely cream sauce.

Yes, that avocado oil is the most carnivore 5h1t I have ever seen. 😅
I like chopping it in bitesize pieces, and putting it in a bowl, where I add a little mustard and some coconut aminos from trader joe's, and eat it in front of tv ( the bowl prevents spillage of juices anywhere on the couch ).
I feel more confident trying to cook a steak again. The first time it was Chuck eye and I over cooked it and also found out I had tooth decay. Yeah it did hurt. It was baked first then in the pan because I saw that somewhere. But I'm ready to retry with the in a pinch good steaks I seen at Wal-Mart that looked like that one you had. I figure when adding intermediate fasting for days at a time then that makes grass fed steaks more and more affordable.

I thought you werent supposed to use oil in carnivore diets? But I see you used avocado oil. Am I missing something? From what Ive been reading, you're supposed to cook with just butter, ghee, or some type of animal fat.

Curious to know what you're hoping to avoid from the fat, which is not organic? Many carnivores would rather eat animal fat than avocado oil.

Is it possible to cook steak without any butter or oil on a cast iron pan? I'm experimenting with the carnivore diet but I don't want to use any dairy or oils. Do you think the steak will cook in its own fats?

Any thoughts on quality issues with avocado oil? I've heard that olive and avocado oils are often mixed with lower quality veggie oils and due to the lax regulations companies don't have to let the consumer know. I know some Keto/Carnivore folks are saying to avoid both unless you can confirm the oil is 100% pure.
Buy best quality/highest brand possible. Yes there are concerns.

Do you let the steak get to room temperature before beginning? (maybe you said this)
If doing over stove/flame how do you know when pan is ready for sear and how low do you go for butter baste?
If the steak is think, i do let it sit out. If it's thin, I cook it right away pretty much. Butter base 20-30 seconds per side with heat turned down to low. when pan starts smoking, drop steak in. it's ready
You said you cut the fat off the meat because you are in a leaning phase but you also mentioned that you avoid the fat unless it is meat from certain suppliers. I'm new to the carnivore diet but from what I have read I should be eating all the fat in the meat. The fattier the better. Is that accurate or should I limit the fat?
No there's no reason to eat all the fat unless you have a specific goal. I don't like pure fat personally and for leaning you want to control fat intake. This is based on your goals.
Enjoyed the vid! My only concern is I can't eat the entire steak. And how could I reheat half of it for later without turning it into shoe leather?

I'm sorry.... I've been eating steak all my life and I STILL cannot abide a pink steak. I absolutely love a WELL DONE steak when the middle is gray/brown. Cooking the steak in the cow's own milk (butter) seems odd to me but I do slather butter all over my steak while it's on my plate. I do 18-hour intermittent fasting every day so I do not eat until 2pm every day. Intermittent fasting makes the steak taste all the better. This is a feast!

Even a stainless pan if you use oil and preheat it a lot it wont stick

I am full fledge carnivore.
Hia can someone please tell me i am new to starting the carnivore diet and have chronic pain and autoimmine conditions. So my goal is to eat only beef and lamb and totally avoid oils ( no veg or seeds oil ) the most i have been told to use is either nothing or use beef tallow ( or butter but for now need to elimate most ingrediants)
My question is in a cast iron skillet literally most of them come " pre seasoned" in oil or wax or something? Does that mean if i cook my steak in a cast iron skillet it will have veg oil potentially on it?
I need to avoid all these inflammatory oils?

Cows can break down the plants into the nutrients that we cannot, therefore eating the cow is we get those nutrients. Not from the plant directly.
It is keto if you’re using avocado oil. Carnivore omits all plants. But it’s fine to do a variation of any diet if that’s your plan.
