one thing is that there are always exceptions and some shy girls will manage their body language and touch and pretend that they don't like you by avoiding doing the signs in this video lol.. so it'll always seem like they aren't interested. So everyone gets nervous they are reading the situation wrong(both men and women). In general having a bit more confident makes you look better, but some times the best bet might really be to just ask for clarification.
