I am using poolish and add my dough next day. I am making 70% hydration dough. Can I still use dough hook or paddle? How long should I mix the dough for and what speed ?
@@erinshannon3727 I’m working on it right now it’s hard with me and the wife both working on getting pizza kits out to people and also our kids being out of school and playing babysitters. But we found camps for next summer 🤣🤣🤣
These videos are too long, too much extraneous talk. Blah, blah, blah. In the first video you call the P poulish then you call it flour, which is confusing and then in the second video you don’t actually say you’re putting the 2/3rds cup of water into the poulish for way too long into the video. You talk about adding the water into the bowl but I couldn’t tell if the bowl was empty, had the poulish in it or maybe another ingredient, for too long of the video. Just say COLD water! You don’t need to talk about different parts of the country. Not sure it’s worth even trying to make this~

Need the mixer kneading video. I assume it’s just let the hook work it until it’s 73 degrees.
Also wanting to see the next video of stretching the dough in the mixer to 23deg C...
