Ah.... I remember when the level 1 Wizard did this to my first ever boss creature. All because of a misread spell...
It wasn't so much of a one shot as it was a slow... agonizing... beatdown.
I was new as a DM, my friend was dyslexic, and I have never been one to play a caster. So when they said the level 1 spell 'shield' lasted for a minute, rather than a round, I believed them.
Thus, my homebrew Wendigo, which was meant to come by, knock them out, and begin the story bead trail, was absolutely annihilated.
Round after round of firebolt in its face while I desperately rolled its otherwise deadly multiattack. Trying to get just one hit in, since that would give me the knock out I needed.
Alas, when fire was its only vulnerability and the Wizard's AC was suddenly 20, with spell slots to spare...
My Wendigo disintegrated without any real fight.
Needless to say, though this singular act propelled the party into high esteem and still has lasting effects to this day when they're level 14-15; I no longer trust the reading of a spell. I *always* make sure to read the description as well. ***Just*** in case someone misreads something. XD

I just went ahead and basically memorized every spell available in dungeons and Dragons, and then set up a public Google drive folder with the revisions to each spell that were necessary to fit better with the lore of D&D (specifically making Astral Projection a spell that someone might take, making Magic Jar work better vs mummies that you control so that you can become a lesser lich, making Create Undead work with shared spellcasting in order to spend twice as many spell slots of a given level to get the equivalent benefit of casting at the next level, allowing Finger of Death to grant you permanent control over zombies under your control, revising Wish to make sure Glyph of Warding doesn’t work with it and to provide for many more levels of options with progressively higher chances of never being able to cast Wish again (and then a last option to use Wish and expend both your ability to cast Wish and two levels in order to grant someone else one level in any class).

I still remember the time I nearly made the DM just ragequit from one-shotting a boss-like character in the very first action of the encounter. Character at the time was a human Barbarian at the time (Before he died and was resurrected as a Warforged), and he had just gotten his first level as a Frenzied Berserker (Barbarian 6 Frenzied Berserker 1, EL7), as well as obtaining what would be his final weapon type of choice (Talenta Sharrash). Our party was hunting down a guy who was both organizing general crimes as well as organizing monsters that were attacking lots of different villages/towns/cities, and was possibly plotting some kind of military coup of Sharn (We later found out he was just a puppet for someone else that was off doing some even worse shit in the background). It all culminated when we chased the mini-BBEG onto an Airship and he took off, so we had to use a Skiff to catch up and board the Airship. We finally caught up with the BBEG and we quickly found out he had the Airship rigged to fly at its maximum speed going towards Sharn (The City of Towers), and we later found he had some device that was jamming Sharn's Airship Override Zone, meaning he planned on having the Airship try to take out as many buildings as possible. Anyway, BBEG had some crazy monologue in which he revealed he was going to crash the airship and kill us while still somehow surviving, so we initiated battle so we could try to stop the ship.
Well, my character won the Initiative Roll, I think it was with an 18 on the d20. Anyway, I take my turn, charge attack with 20 points of attack into my newly acquired Supreme Power Attack...which is x4 damage per attack point sacrificed with a two-handed weapon. This attack critted (with a 19)...which is a x4 multiplier for Talenta Sharrashes. Rolled to Confirm Crit and rolled a Nat 20. Quick explanation, my DM uses two different Nat 20 Confirm Crit rules, first being Getting a Nat 20 on Confirm Crit Roll against a normal enemy becomes a new roll being Confirm Critical Kill roll for insta-killing whatever it is your attacking so long as its a non-important story NPC...important NPC's however, like our BBEG here, get a different Crit Confirm system. If you get a Nat 20 when you roll to confirm crit on an important NPC, it results in locking in your Crit and you're now rolling to confirm crit with a +1 to your crit multiplier, so now I was rolling to Confirm a x5 Crit multiplier against the BBEG...and then I rolled _ANOTHER_ Nat 20...DM was looking uncomfortable at this point and the rest of the party was looking a little scared, as I was now about to roll to Confirm x6 Crit with the x5 Crit locked in. DM at this point gave me one of the d20's he was using at the time and told me to roll with that d20 as he gave mine a test to see if I was using a loaded d20. I rolled again with the DM's dice an got yet another Nat 20...the DM just kind of lost it. Hung his head down, did something of a mix between a laugh and a sob, got up and started walking around. Party was looking rather worried, and hell I was too, we hadn't seen our DM like this at all. He came back and just said this, "So, you hit this guy so hard that you send him not through just one, but two bulkheads of the airship, as he screams in absolute terror from just how strong you are, as he then explodes into a black ominous cloud of smoke and disappears through the cracks of the airship, running away." With the mini-BBEG taken care of, we quickly disable the device that has the Airship rigged to kamikaze into Sharn, and we now posses an Ifrit-powered Airship.
And thus, after this encounter, the party and the DM became traumatized by my character after he dropped 480 Damage before taking in damage rolls into consideration...as a god damn level 7 character. The party especially considering my character had to make Will Saves to get out of Frenzy otherwise start attacking the Party if no enemies are around, and Wisdom was his dump stat with a -4 Wisdom Modifier at the time, lol.
We were honestly expecting to see the mini-BBEG again later down the road, but we found out after confronting the mini-BBEG's master that after mini-BBEG came cowering back trying to warn the true BBEG of that campaign arc of our party and especially my character, true BBEG killed off the mini-BBEG for his "insolence" and "cowardice" after practically his humiliating defeat of getting nuked by a single melee attack. Funnily enough, the same thing happened to the poor true BBEG too, except the damage was closer to 1k in a single strike before damage rolls were calculated.

In my very 1st campaign it was just me playing as a Drow Bard, and my cousin being the DM. My cousin implemented a new mechanic, Plunge attacks. You have to be at least 10 feet above the target, if you are, you can jump of and dive down to strike at your foe. In the mid-late part of the campaign, I was fighting a queen-spider-lady boss person-thing, in a giant cavern. My cousin made to mistake of. Giving me control of my Drow, an NPC who can teleport (I forgot how), and 3 other NPC’s that I somehow got to agree to help.
My plan was simple; before she could enter her palace (‘cause she was coming back from a trip) 2 of the NPC’s named Jerry and Larry would draw the queen out of her carriage (keep in mine the queen was a bit bigger that an ogre), then me, the teleporter (I forgot his name so I will call him Tim) and the NPC Paladin (I forgot his name) would jump down from a hanging house. We all plunge/surprise attacked, then Tim would teleport the 5 of us (including Jerry and Larry) up and we would repeat the attack again and again until the queen died.
And guess what? IT WORKED!!! The queen was last in initiative (I think she had legendary actions, but if she did, my cousin forgot), so we just plunge attack 3 times and she died (the plunger attacks were OP as Heck. My cousin then changed them for his sake) because we did 50-60 extra points of damage needed (keep in mind their health was Inbetween 250-350 HP).
And that’s how I gave my cousin PTSD!!!!!
    (also I did this when I was 11 or 12, I forgot)

My first campaign as DM the party walked into the BBEG's chambers and he promptly cast invisibility on himself and began circling the party asking questions of them. The barbarian rolls perception and does well enough that she asks to throw a rock, but then changes her mind and asks to throw the halfling. She succeeds on her attack roll and then the halfling succeeds on multiple grapple checks with the BBEG while the rest of the party dispatches the minions in the room. The BBEG finally untangles himself from the halfling right after the party finishes with the minions and he doesn't get a single spell off before being beat to death.

    I had the opposite.
I’m digging though the monster manual and I see the awakened tree. Perfect for a nice fight in the woods.
So, the players start the encounter a few sessions later and oh dear lord.
6 misses in a row, I have to debuff the awakened tree because it does way too much damage for my squishy little players and they end up running away.

    This happened to us.
We had an habit of been on a "rolling DM duty", that every week it was One of us that would DM for those willing an thus it was a different campaign, so we had like 4 running campaign in 4th Ed.
It was made so that the Dm's could also play and vice versa.
So one of the guy who had LOTS of ideas, but sometimes the worst execution, Dmed that week.
We face off a DnD version of Barbossa, from Pirates of the Carabians, On eof our characters was a Dwarven Pirate, so the two where old acquintances.
We reach a room in a dungeon where there's like 200 Pirates Skeletons, so our Pirate Dwarf ask for Parley.
The Fight with Barbossa, was TOUGH, while Barbossa himself was not that great of a deal, it was the 3 adds that was an issue...
A Giant Undead Gorilla named Jack, and 2 Flaming Auras skeletons...
Issue was that the Skeletons flame aura would inflict EACH 4 fire damage at the start of the turn, if you are in the aura.
The two things managed to be close enough at all times that their auras would overlap, and while it doesn't look like much 8 fire damage per turn, when you have like 50 HP, it does kinda sting.
We still amanged to get out of there, but my character had to constantly chug down potions in the throat of the downed players, so that they don't take damage while unconcious...
The Dm and us have a conversation that this encounter was not balanced, he told us that it was an Homebrew encounter and monsters, so that he should fine tune it for next time, ( he was a debuting DM, so we let it slide)
A few rooms later, we encounter this Module BBEG, who has a Hulking monstrosity of a minion and the guy himself looks intimidating.
And seeing how the last Boss fight went..., And since his Init roll was bad, We Unleashed Our Dailies and others Class features...
The amount of damage we deal is ENORMOUS.
We see the face of the DM be a bit concerned, then he does the turn of the BBEG, he deal some damage and some debuff to one of us.
And then we Unleash everything we have, once again.
The DM's face said it all... "Yo chill...He's dead..."
    We " Wut?, allready?"
DM "Allready?, he was technically ALLREADY DEAD the turn before, you Oneshotted Him!, but since it would have been lame that the module's BBEG dies in one turn i ignored it and was gonna go for a couple of turns, But you Did AGAIN, he went from his MAx hp to his MAx Hp in Negatif in ONE SINGLE TURN!"
We where all like, "Man he sucks..."
DM "Well what can i say, this time it ain't an Homebrew that i screwed up, its the BBEG of the official D&D module"
Us "Oh well... a win is a win..."

I remember in Solasta, there was a chapter boss with like 150 hp, an orc shaman. My group could prepare before the fight because of choice, so my wizard gives haste to the level 9 paladin. This gives a fourth attack to the paladin, the third comes from a homebrew feat in Solasta. So my paladin rushed the shaman then hit him with his four attacks, using his most powerful smite each time, killing this chapter boss during the round of surprise. Was a good time.

From what I understand about 5e is that it is not built for a fresh party (one who just completed a long rest) to be challenged by a single enemy. It takes VERY meticulous planning to design a solo monster who is designed to take on the entire party.
