K1-V1116 is workhorse (few if any nutrient) good for semi-sweet wine (red, white, or rose)
EC-1118 is workhorse (few if any nutrient) good for dry wine (red, white, or rose)
Used 118 at one point and it takes a bit to wake up longer than the other lalvlin yeasts but It finished a 1 gallon ferment to 18% abv in 3 days and was so violent in its fermentation it blew mead everywhere even with propper head space lol so be prepared for that best used in bigger batches.
The v1116 is my go to yeast. I usually get the best results with that specific yeast. I'm not a fan of the 1118. Ppl that like drier wines would like the 1118 but if you want real flavour, use the k1 v1116

Hello dear friend, how are you? Sorry, we do not have rice balls in Iran. Can we use bread yeast to make rice beer instead of lime balls? Thank you.
Apologies for the late response but bread yeast works fine in most recipes but is a little weaker.

1 packet yeast = 5 gallons . ( 3 pounds of sugar per gallon depending on the fruit you use)
I use ONE packet of yeast in both 2 gallon and 5 gallon containers ( red star yeast) and I always get fruit flavored WATER.
But when I use 5 packets or 3 packets I get the perfect blend of wine. Any thoughts on why this is? Is it based on location?
Could be all sorts of things. Sounds like if you are not making a yeast starter already, doing so could solve your problem. Otherwise, maybe it’s too much sulfite, too much competition with other microbes (lax sanitization), poor temperature control, etc.
