For a lighter version of alfredo, I like to use chicken stock and cream cheese, then thicken it with a corn starch slurry or roux. Tastes pretty great! Thanks for the inspo!

Jeff Ward some of the most famous Italian chefs in the world say to the tooth. That is not a Canadian way of saying it at all it is said all over America and Italy along with other countries such as the UK and Russia. Al dente means to the tooth in English.

I LOVE the taco and chicken alfredo stuffed shells! I didn't have any heavy cream on hand but I googled an alternative and was told to use 1/4 cup melted butter and 3/4 cup milk (per 1 cup of heavy cream, the recipe calls for 2 cups so just double the milk and butter) and mix really well and the recipe turned out fabulous still.
This was delicious and I have some for lunch at work and the kids loved it too I'm always looking for healthy foods and the Italian sausage stuffed shells were great can't wait to try the taco one I'm a big black bean lover

Made the alfredo ones tonight and they were AMAZING!!! So glad I made a double recipe so we have lots leftover! Thanks for the awesome recipe! Btw, I'm lactose intolerant, so I used reduced fat cream cheese and whole milk lactaid milk and it worked out really well!!
King Zeke there are apps but it is helpful to have that info too. Logistically I can see how it is difficult to calculate the nutritional info for each recipe, though.
in the netherlands we use kale for "stampot" we cook patatoes with the kale..and then we mash it with butter and milk....some saugage or meatball with it...done :P we have different "tampotten"...patatoes with vegetbles and mash it XD

I just finished making 28 quarts of taco soup and I live alone! Whenever I cook I do so in huge batches so that I don't have to cook everyday because I need help to cook and I have no help on Sundays and only half a day on Saturday which takes me that long to wake up. So when we cook I can Bank meals and have choices and only have to cook every 2 to 3 weeks or even less. I have six or seven choices in the freezer! :-) I want to double this and use beef crumbles caramelized onions some garlic smoked paprika red peppers and vegan shredded mozzarella and may even triple it because approximately 3 shells would be a meal for me with a vegetable side dish. I'm a make three pans of different flavors and then break them up into meals freeze them lightly first in my big freezer and then just break apart three at a time and seal them in my seal a meal FoodSaver thing.
And this is why with this deliciousness, since I have moved to this part of the world I started suffering from high blood pressure and high colesterol! 😫

I always keep 5 lb of TVP in the house to rehydrate and flavor myself. I also sometimes usually use half TVP and half barley because barley actually chews like meat. :-)
