In reality this was only disengaged to prevent from colliding with the ground once, but I believe this was made to prevent the jets airframe from bending, so it wouldn’t cost the Navy/Airforce somewhere near 10 million dollars to repair it
This is never used IRL for that, it's not how the jet is meant to be flown, it's an emergency over ride for the "oh crap there's the ground" moments, it's not meant for dogfights where the G could be sustained for a lot longer than a split second to avoid the face of a hill.

Got the f18 2 days ago and im excited to learn it bought Syria a few mins ago and am waiting for that beast to download. But thanks i never knew this and i just started dcs i still only know air to air and unguided bombs manual drop in the f16 i got on december 2nd but wanted to have a little more to play with.
Just bought the f18 in the summer sale. I find that the rudder seem a little bland. It barley moves even at max. Have I messed up a setting or is that default?
No, that's normal. Your rudders are small and don't affect your flight much, unless at slow speeds. I only ever use them during a dogfight, strafing run or maintaining takeoff runway lineup. In a dogfight they can help when you want to use adverse yaw. Yaw and roll are aerodynamically linked, so yawing left gives you a small left roll force, but the FCS is already coded to cancel out this link.
If my memory serves correctly the paddle switch is the oh shit button it overrides the computers GLimiter which keeps you from killing yourself by overging the airframe
The override will activate and stay activated as long as: 1) Aircraft is still manoeuvring 2) 'Paddle Switch' was pressed during some part off the stick deflection. So, no, you don't have to hold it. Pressing it just as you begin to pull will activate it, or pressing it while the stick is fully back etc. It will only disengage when the stick is returned back to resting position.

Isn't this to do with overriding the safety/limiter that damsge the structure of the jet irl? I remember talking about this with some simmers before, because when we would dogfight, you were not allowed to do this
afaik it doesn't necessarily bend up the airframe like a pretzel if you pull high Gs with the G-limit removed: the frame is overbuilt for the advised Max Gs you can pull *safely*. if defenetly stresses it a lot more then it's advised and it reduces the max flight hours of that specific plane: you might bend, stress and even crack the frame...if you've got ordinance you might even ruin the Pilons. but techically apart from the Ground Crew and the Brass tearing you a new one nothing exceedly bad and Unresolvable should happen

It over stresses the airframe IRL and only used as a last ditch effort to avoid hitting the ground.
You can also turn EVEN faster if you pull the 2 buttons that say 15 on the right side.

I'm playing in VR so I can't use keyboard buttons. Where in the cockpit is the button if there is a physical button.

yea i’m pretty sure you’re right. i remember hearing that it was for pilot safety and to preserve the airframe.
Don't get why you wouldnt want to disingage the g-limit during a dogfight if necessary tbh
