Thank you very much for sharing this recipe! I have fond memories of my grandma making this special kueh when I was a kid. Her dough recipe didn’t have tapioca flour just like yours. Now I have your recipe to make kueh whenever I remember AH MAH. Thanks again!

1) Tried this recipe but the dough was too soft to knead - why?. Second try using only 155gm for a more pliable dough. 2) If I prefer a more chewy skin, can I use more glutinous rice flour (50g instead of 25g) and reduce the rice flour from 125g to 100g?

If you prefer chewy skin, you can replace glutinous rice with tapiaco flour

是可以的,但是红龟糕会比较q,这个会比较软,如果你要比较q的,把一部分粘米粉换成糯米,就可以了。
