To add onto what she said about you not knowing if its been frozen, they all are shipped frozen. Once we get them at the store, we unload the pallet into the freezer cooler. Thawing doesn't start until we put them on the shelf for you to buy. (This is Wal-Mart, at least. I cant speak on other grocers)

People been getting food poison from wall-marts meat right and left. Sometimes close to all of the meat is rotting. Walmart has become save-a-lot with their pork and green slime. Makes me want to turn vegan.

The spring back test is foolish because meat that chilled in the fridge would obviously become harder and less springy due to its inner liquid being frozen. BTW Chickens decades past were easily spotted as being healthy or not due to the color of their skin and fat. It was well know that chicken with a yellowish tint was a healthy bird oppose to those that were white. A white flesh chicken was sign that it was an unhealthy bird, nutrition levels not high enough to support its melanin, or simply being sick. We humans experience the same thing, as when we are il we turn pale. 99% of the chicken sold to use is unhealthy. white fleshed birds. Birds not eating real grassed, Buts kept alive via antibiotics, high fat diets, steroids and growth hormones, never seeing a blade of grass and never getting nutrients from the sun. hence white flesh. but this intensive farming practice was not always the case, back in the 80's chickens looked like this. ruclips.net/video/Pjb2kc_3oTM/видео.html
