TEXAS CAVIAR or COWBOY CAVIAR is a popular bean dip served with tortilla chips (SUPER BOWL WEEKEND)

TEXAS CAVIAR is a salad made of black-eyes peas lightly picked in a vinaigrette-style dressing and often eaten with tortilla chips!! NO REAL CAVIAR INCLUDED!! Recipe below...
TEXAS CAVIAR
1 can (15-ounces) black-eyed peas, drained and rinsed under cool running tap water
1 can (15-ounces) black beans, drained and rinsed under cool running tap water
1 can (14-ounces) diced tomatoes, undrained
1-1/2 cups fresh, frozen, or drained canned sweet corn
1/4-1/2 cup red onions, finely chopped
1/4 cup fresh cilantro, minced
2 garlic cloves, finely minced
DRESSING:
2 tablespoons olive oil or canola oil
2 tablespoons white vinegar
2 tablespoons sugar, or use plant-based sugar
1-2 teaspoon freshly squeezed lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1. In a large bowl add sugar, white vinegar, oil, lime juice, salt, pepper, and cumin. Whisk until well incorporated. Add tomatoes, rinsed and drained black-eyed peas and black beans, corn, red onion, cilantro, and garlic.
2. Toss all ingredients until well blended. Cover and refrigerate up to 3 hours or overnight before serving.
3. Serve with tortilla chips or as a side dish.
TIPS: Make the night before!! Store in refrigerate covered up to 2 days for freshness!!

Can you omit the cilantro, and use parsley instead? Cilantro tastes like soap to some people.
