I love that you are straight to the point and dont spend half an hour talking about what your second cousin twice removed did three summers ago.

Looks good! I love coconut flour! We usually use almond flour to make desserts on our channel, but we made a pound cake which we didn’t post with coconut flour, it was so delicious!
Just made this, great English muffin but would recommend a teaspoon or more of Splenda, used half a teaspoon even tho it was in the recipe and it wasn’t sweet enough
These definitely can not be made with any other flour. Coconut flour is a very unique flour. It is very absorbent and requires lots of liquid and eggs for stability. As far as vegan goes you can try using flax eggs instead of chicken eggs and coconut oil instead of the butter. I have not tried this with flax eggs so I'm not sure if it will work. Flax eggs turn into a gel type substance when in liquid which is great for stability but they are also absorbent as is coconut flour. If you try this and it works I would love to hear about it.
I know it sounds like a lot of eggs but coconut flour requires more eggs than other flours. Coconut flour is VERY absorbent and needs extra binding and liquid ingredients
