If you fon't want the dust everywhere in the convent you could set up an underpressure system. Suck out the dusty air from the work area and either blow it out a window in a spot where it won't hurt (with a long outlet hose or something) or blow it through a filter that's positioned in a next room. Dryfast have such a system. Anyway, if you keep the pressure lowest in the dirty area i.e. higher in the clean rooms, the dust won't spread.
Billy, I know the camerawork is a real pain in the....well you know obviously, but you are an excellent cameraman and the overlay music really adds the touch of dramatic flair your videos respect. Love the project, and the v8sion for it is spot on....great editing as well...
What a nice send off for Alex and his fur baby! I'm impressed by the rapid progress - Simon and Yan powered through the hall plasterboarding! Looking at the shots of that space, it struck me how architectural and austerely grand the hall actually is, and how the flow through that whole side of the building, all the formal rooms you're creating, pivots on the doors to the kitchen and the dining room. May I suggest you reflect the importance of the hall by giving those doors wider and bolder architraves? And because they're comparitively low for such important doors, how about visually raising them by adding wooden doorcase cornices above the architraves - perhaps even antiques ones?

A new location for the recorder... I remeber when the channel forst started a sort of laundry room you said which was on the main floor but on the end of the building and a door heading out to the yard. You haven't shown much of that wing since. It would be on the oposite side from the chapel and maybe toward the greenhouse and garden.
Earnest is going to know how to operate that digger before you know it. Just like the farm kids here in Wisconsin, they know how to drive a tractor before they learn how to drive a car.

Could you install a piece of pvc piping behind the plasterboard for the AC tubing/piping to be threaded? Then you could finish the plasterboard over the basement staircase.
