I am a chef on the west coast. I would love to defend the west coast but I can not. Bread and anything with bread (pizza, sandwich, bagels etc) are on a whole other level on the east coast. At this point, its pretty well known that the water is the main culprit. There have been plenty of east coast guys to come here the west coast and make pizza, sandwich and bagels but it will never be the same unless they bring NY water or have some machine that can treat water (there are such machines). If you ask me it is just a good excuse to go to the east coast.. just not during the winter lol my west coast butt will freeze
