I'm starting to learn that a lot of different peppers are just the same ones at different stages like this. A lot of people don't realize that even green bell peppers are just red/yellow/orange ones that aren't ripe yet.
@@digitalworkbench Yes but from what I understand, most of the dried peppers from Mexico don' t come from popular 'fresh' peppers. Poblano and Jalapenos are the only 2 I now that are popular in both dry and fresh.
Chipotles are not the only dried chiles. Almost every fresh chile changes its name and profile flavor when it dries: morita, cascabel, pasilla, etc. (Source: I'm a proud mexican procooker :D )
We used to buy our dried peppers around the corner, at a Mexican restaurant. The chef got them from her hometown. The pandemic killed the business, though, so that's over.
@@JeffO-you could possibly try something called liquid smoke ? It’s a flavour additive for exactly that, adding a smoked flavour when that’s not available. I’ve used it in a beef jerky marinade before putting it in the dehydrator and it wasn’t quite the same but definitely improved the flavour. I’m not sure if it would would work in this scenario, or if the jalapeño have to be brought to a specific temp before it’s dried, but it would be interesting to see if the liquid smoke would work similarly to the smoking, flavour wise at least.
Finally someone who gets it right. Ive been getting into smaller commercial pepper growing and some of the misinformation can be frustrating. Even found someone who thought a ghost pepper was a Carolina reaper just cause some packaging said so lol
I really don’t like jalapeños. They taste like medicine (probably because they aren’t fully ripened red chilies), but I’m pretty fond of red jalapeño sauce my dad has always made.
You can buy these at the mexican grocery store in a bag and they are no different than what you can grow yourself. There are also some different kinds (not called chipolte) that are smoked waaaay more. Most of those grocery stores will have both of them.
Fun fact there are two varieties of chipotle pepper: chipotle morita which is dark and fruity tasting and most common in those cans of chipotle in adobo sauce, the other variety is called chipotle meco and is smoked longer until it’s a tan/brown color
I made hot sauce by fermenting smoked (and unsmoked) jalapenos (and habaneros). Does this qualify as chipotle hot sauce? Or does it need to be dried at some point
I know what the famous fast food restaurant is only because of youtube. Turns out 2 European countries outside English speaking countries and one middle eastern country have the famous restaurant everyone guaranteed knows.
There are different types, there is also one called chipotle meco which looks completely different. It's a tan color because they smoke it even longer and it feels almost leathery. The smokey flavor is even more intense.
I thought chipotles are red ancho chilies, which are poblanos. Now I am confused 😂 I grew some poblanos in my garden and they start to turn red now. I will dry them anyways, hopefully I get chipotle seasoning out of them 😅
@@DaDaDo661 Thanks. I'm wondering if there's any way at all to do this at home and indoors. I love Chipotle powder, but it's always too hot for me, which is strange because Jalapeños aren't usually that hot.
WOW! I didnt know they were jalapeño. Ive mulled that one for YEARS as Ive never seen a fresh one (being in Oz or NZ does not help - hence my vids where i grab cockatoos n strole wild koalas)! Ive got jalapeño in the fridge. Thank You. :) :)
I actually have peppers growing outside for the first time and didn't know this. I wasn't sure when to pick because they're all green, yet I noticed them starting to turn red like this. Now I know to keep them there.
And yes I do know what a Chipotle is.. and when jalapeno peppers get smoked like this they are actually disgusting tasting I would eat a jalapeno pepper raw everyday but I will never buy anything that is Chipotle
I did not know chipotle peppers were aged jalapeños, I just assumed it was a different variety all together
I thought they were poblanos ancho chillie per is from poblanos

Jalapeño=Chipotle
Poblano=ancho
Anaheim=colorado
Serrano=chile seco

As a Mexican it always pissed me off how none of the dishes at Chipotle had any chipotle peppers in them
Bro seriously. It's so dumb. Like that could offer a Chipotle sauce lol
The Chipotle by me in NY does and it is the best Chipotle I've been to!
Lots of Chipotle dishes have Chipotle in them
Please tell me which ones I'm not trying to hate because if they have chipotle dishes I would LOVE to have some
@genevaconventionsviolator3994 some of the protiens the queso maybe the beans lemme go check

It's true there are like 3-4 common cultivars that are made into every type of pepper
We used to buy our dried peppers around the corner, at a Mexican restaurant. The chef got them from her hometown. The pandemic killed the business, though, so that's over.
Is there a way to make smoked peppers at home, and even indoors? Or anything that could be added to them? I don't know if there is smoke flavor.

@@alipennington3764 Thanks. I'll look into it.
I love the chipotles in adobo sauce, blend it all up, mix it with sour cream and it goes good on anything.
Using Mexican crema is lighter and let's the chipotle flavor come out more. Delicious
I grew my own jalapenos for the first time this year. They are super productive. Might have to give this a try

I am so so glad to have this information... thank you
Today I learned that Chipotle aren't only smoked dried peppers but it's also a restaurant brand. Not what I expected when the question was asked. 😂
Where are you from?
What temp are you smoking them at?
I had a vague idea how chipotle peppers were made (I knew they were jalapeños), but it was nice to see the process.
This is why I’ve been a Green fan since the munchies days. Quality content
Very informative.ty
Very interesting to see the process, didn’t know either
When I first started gardening I wanted to grow chipotle peppers, and it lead me to this discovery and the. The Smokey flavor made sense 😂

This is awesome thank you
Great Chef...😂 you've brought light to EVERONE.. DOBLE CLAP👏👏
Also great on the Chipotle Spud!!
In Sonora you have a climate that lends itself to creating amazing Chipotle and Carne seca ❤
I eat chipotles raw all the time some say it tastes bad but my taste buds telling me they taste really good
This was awesome. Thanks.
What camera do you use to shoot these videos??! Amazing
great video!
Learned something new. Thanks
If you throw those chipotles in with any meat and stock and slow cook for long enough it always comes out crazy good
Fun fact there are two varieties of chipotle pepper: chipotle morita which is dark and fruity tasting and most common in those cans of chipotle in adobo sauce, the other variety is called chipotle meco and is smoked longer until it’s a tan/brown color
Yep, I know what chipotle is. Chipotle powder is my fave seasoning! Add it to ranch dressing for a smoky, spicy dipping sauce!
They always ask what is a chipotle or where is chipotle. They never ask HOW is chipotle.
I was today years old when I found out a chipotle is an aged jalapeño pepper 😩. I love chipotle peppers.
If you wanted to make a dupe chipotle chicken recipe…..I wouldn’t hate it. All the dupes out there (that I’ve tried) just haven’t been right.
There are two kinds of chipotle though. Meco and Morita. Very different flavors. Depends when you harvest them.
So you leave the seeds in to make the chili powder? I always hated how my fingers got sticky taking them all out.
I made hot sauce by fermenting smoked (and unsmoked) jalapenos (and habaneros). Does this qualify as chipotle hot sauce? Or does it need to be dried at some point
I didn't know Chipotle was a restaurant chain nor a dried jalapeño. I learned two things today 🎉
I would love to know about the dehydrator used on this video ,,,,, where can I get that
I know what the famous fast food restaurant is only because of youtube. Turns out 2 European countries outside English speaking countries and one middle eastern country have the famous restaurant everyone guaranteed knows.
I had no idea! Thanks for educating us! 🌶️
I love you alone but I also miss the days of you and your brother
In the Mexican supermercados it's called a Morita pepper
There are different types, there is also one called chipotle meco which looks completely different. It's a tan color because they smoke it even longer and it feels almost leathery. The smokey flavor is even more intense.
Mine turn red without cracking
Yummy ❤
More hot pepper content!
My coworkers saying "grab some pasilla peppers from the walk-in" MY FRIEND that is a poblano, we even have powdered pasilla
Thank you! I never knew. 🤪
Dude has a Cabela's dehydrator
I should grow jalapeños i can never find red ones at the store
🇲🇽🇲🇽🇲🇽
Cool❤❤❤❤
Where to find that spice grinder please? TIA
It's a coffee grinder. Don't use the same one for both coffee and spices.
Coraline
@@littlewolf9049 ¿como?
Why does it irk me so much when people constantly miss pronounce jalapeño as jala-peeno or hala-peenyo.
I’m proud to say I knew what a chipotle was before this video
Yum
It's smokey dried chilli.
F for the people that know the restaurant and dont know what a chipotle actually is 💀.

no ancho is a dried poblano pepper, still good but completely different flavor
Damn, you smoked a pepper. 💨
My buddy used a jalapeño as a pipe to smoke one time... I went along with it and man it *burned*
Someone knows when is the jalapeno is at its peak in term of hotness? Or the corking + getting all red change nothing
Well I know now !!!
I've heard of jalapeños, but I've never heard of a jalapiño.
Morita Chili Peppers are the best to turn into chipotle.
I never knew
I just went to a Mexican vender and bought a bag of chipotle peppers for $1. I made some soup out with about 3 peppers. HOT! HOT! HOT!
Is it possible to buy a Jalapeno and get it to keep ripening?
Yes and no. Picked Jalapenos will ripen if you leave them out in the sun, but they won't turn red once picked
@@DaDaDo661 Thanks. I'm wondering if there's any way at all to do this at home and indoors. I love Chipotle powder, but it's always too hot for me, which is strange because Jalapeños aren't usually that hot.
This was supposed to be kept as a secret
I knew this
What's a chipotle with you?
I love that jalapeno peppers considered hot for some people, leaving more to me at the table
WOW! I didnt know they were jalapeño. Ive mulled that one for YEARS as Ive never seen a fresh one (being in Oz or NZ does not help - hence my vids where i grab cockatoos n strole wild koalas)! Ive got jalapeño in the fridge. Thank You. :) :)
I know why a chipotle is
Applewood low and slow lmao
Jala pee ñoo
Now I know why I don’t like them! I don’t like jalapeños in any form I guess 😂.
So mexicans are like Italians ita just a jalapeño
Smoked jalapenos
Chipotle peppers are my favorites. Anything Chipotle, just not the restaurant.
Are red jalapenos hotter than green?
The Scoville rating usually stays the same, but jalapeños can get hotter when they’re left on the vine longer
I like Morita more than Meco
Hallpiño
Excellent explaination and great use of video footage, thank you 👍😆
I grow jalapeños, habaneros, cayenne, and poblanos. Do this with all your peppers. Talk about amazing chipotle and chili.
- *Who would've known !?* 🤔🫡
It's ironic they are named after a spicy pepper, when there is no spice in their food.
I actually have peppers growing outside for the first time and didn't know this. I wasn't sure when to pick because they're all green, yet I noticed them starting to turn red like this. Now I know to keep them there.
Dude, cool video but please learn how to pronounce Jalapeno.
damn. I've been making Chipotle and never realized it.
Poblanos!!
Negative ghostrider. Jalapeño is chipotle, poblano is ancho after smoking and drying process.
Never heard of the fast food chain. #onlyinamerica.
Interesting but a lot of work to get there
Chipotle is vary close to a word in my language that means don't know
Say it with me now… (Hall 👏 a 👏pain 👏 yo) jalapeño
Since you pretty much always stem and seed a dried chili couldn't you do this before you smoked and dehydrated them?
If you are going to do shorts please dont do the seamless loop it is insulting to the viewer.
How ?
please say halaPAYnyoh. keep the pee out of it
Amen. Jalapeño ≠ Jalapiño
(That said, habanero pronounced as habañero is the one that really drives me nuts)
Ffs
Dehydrated chipotle looks like Sukuna's finger lol
It's a smoked jalapeño. Follow me for more 👇
More...what? Your channel doesn’t have any videos about chilis.
Lol
