Having Depression Era parents, I was taught many of these food saving practices. My mother's bacon grease jar was like a 6th offspring. Saving pickle juice for cucumbers from mom's garden. Coffee grounds went into the ground during weeding in the spring. Stale bread or ends went into the freezer to later become bread pudding, bread crumbs or dressing. I learned to can from her because her brother would bring fruit and veggies from his crop picking jobs.
My aunts poured wax over preserves, then water canned with the lid over the wax. People don't wax anymore when canning and i wonder if it wasn't necessary to do both.
I still use several of these tips’ I no longer need to add rice to the salt, but I do have a container of bacon grease in my fridge
Sometimes, the old ways are the best ways.
