This time I just boiled them and put salt and pepper on them. But I also make an Ethiopian dish with boiled beets, potatoes, carrots, and onions, with lemon juice and salt and pepper; that one is good hot or cold, so it makes for really good leftovers!!

Do u live full time in the Bus? Or do you have a home base?
We live full time in our bus. We had a house and used the bus for travel, until a year ago, when we sold our house and moved into the bus full time ☺️
