Malay style we mix the curry powder with some water into a paste and put it in the frying pan after saute the spices/onions etc . Once the oil breaks out, we put in the meat, then after a while we put water or conconut cream

On my part, I'd put salt only after the meat is tender or almost. This way meat gets to tenderize quicker. The dish anyway looks yummy. Thanks for sharing.

Nice premium beef you got in there (full of marble or thin layers of fat). I will try this but the only changes I will make is to saute the curry powder just before dropping the beef so as to intensify its flavour & colour. Great video, short and direct to the significant sequence.

@Glory Days If you notice all of the grease in the curry at the end -- all of that fat rendered out. There wasn't any gristle (that I could see) in the meat. The chuck he was using is normally fairly lean and has much less marbling. It almost seems like he was using wagyu. I'm sure you could just use regular chuck, removing the excess fat and it wouldn't have all the interstitial fat that this beef has.

You obviously don't know curry is from Asia and the types of stews you can make with it vary between countries and cultures.

I do not get the meaning of "Do not boil directly in Water" since you boiled the meat directly in water. The curry looks amazing, though.

It means to saute ingredients & to release the flavor before adding water and boiling.. becoz boiling directly in water w/o sauteing ingredients has different taste. Thank you toshiyuki❤️ have a great day

Saute it first, to extract flavor from ingredients.. then boil it until meat is tender❤️
