The name HATSU contains the wish to become a restaurant where many new experiences can be found, as well as to create and send out new innovative ideas to the world. Its head chef moved to Denmark in 2006 and began training in Copenhagen, the birthplace of the New Nordic Cuisine which caused waves in Europe's culinary world. He returned to Japan after 8 years and in 2018 opened HATSU.
With "the reconstruction of Japanese cuisine" as its concept, HATSU presents an original style of innovative cuisine with a base in seasonal Japanese ingredients and techniques combined together with flavors, fermented ingredients and traditional culinary techniques from Nordic regions.
HATSU is strongly influenced by the "produced locally and consumed locally" aspect of New Nordic Cuisine and aims to recreate this by using Japan's proud local ingredients. HATSU promises dishes which will amaze each of the five senses and a time of wonder and perfect relaxation.
