  • Hello, my lovelies!
Come join me this Sunday as I make my tofu scramble recipe! Call me biased but I think my version is way better than your standard tofu scramble. It's creamy, rich, and has lots of eggy flavor.
If you want to cook along with me, grab the recipe here: rainbowplantlife.com/eggy-tof...
The scramble is fantastic on its own or with toast, but my favorite way to serve it for weekend brunch is alongside spicy yogurt sauce, pita, and salad. Ingredients are below, and I'll show you the method in the livestream.
And I'll be answering all your burning questions, whether about cooking, veganism, or habits I use for more energy (the subject of my latest video!)
Can't wait to see you there!!
    xo,
    Nisha
    OPTIONAL INGREDIENTS FOR BRUNCH PLATE
    Yogurt Sauce & Chile Oil
    - 1 TBSP Aleppo pepper (or 1 to 1.5 tsp red pepper flakes)
    - 2 TBSP extra virgin olive oil
    - ½ cup (113g) unsweetened coconut yogurt
    - 1 garlic clove, crushed with a press
    - 2 to 3 tsp lemon juice
    - ¼ teaspoon dried mint
    - Sea salt + black pepper to taste
    Salad
    - 3 to 4 cups soft tender salad greens
    - Reserved chile oil
    - Lemon juice
    - Sea salt and black pepper
Pita bread and Za'atar for serving

Yaaas mam! I made this with you....while watching. Excellent! Makes a generous amount. I made two toasted egg and cheese sandwiches; one with Follow Your Heart and the other with Chao. Both were good but the egg/Tofu in the SANDWICHs was great! This will be a staple in my house. Will try a vegetable fried rice next using your Tofu scramble.

Im on the replay crew here but I’ve made this twice in the past week and yesterday I ran out of tahini and oat milk so I used sunflower seed butter and pecan milk and it still tasted good! I added a bit more nooch to offset the flavor from the sunflower seed butter. I also only have chipotle powder (not flakes) and the first time I made this I used way too much 🤣🥵 I only use 1/8th of a teaspoon of the powder now!

I just had to try making this tofu scramble! I've made scrambles before but they paled in comparison to Nisha's version. This was SO YUMMY. I used a half block of tofu so only used half of the sauce. I used the leftover sauce to put over some Yukon gold potatoes at another meal! My husband loves everything I make from Nisha's cookbook!

An idea for your next video about proteins (if you haven't filmed it yet, or maybe you already talk about it..!): the concept of protein combining, which means combining certain type of protein rich ingredients to make a complete profile of the essential amino acids. In my opinion this is such an underlighted topic in veganism. I think it's a very good way to make vegan protein foods more "effective", and makes us also understand more about what proteins are and why plant based proteins really are different from animal proteins.
That is my input haha. Thanks anyways for this great quality live stream again, and looking forward to the protein video!

I had to do some variation because I don't have all ingrediences available, but the final result was super tasty; the tahini was a bit dominant in my mixture but I liked the combination of tahini and tofu very much. I can imagine it would be super tasty to combine roasted tofu sticks with a tahini sauce maybe 😍
