My buddy Eric was a professional chef and he actually died after cutting himself in the wrist during a hectic shift. It cut so deep he bled out before the ambulance arrived. That's why I would never touch that thing.
The addage about a dull blade is more dangerous than a sharp blade does NOT apply to mandolines. These are dangerous with a sharp or dull blade (arguably more dangerous with a sharp blade) and the only way to ensure safetey is to use cut-resistant kitchen safety gloves. That saying goes for knives only.
Yeah try that slicing onions, when the dull knife goes nowhere and suddenly the whole onion slips as the layers separate causing you to chop the knife down onto the board and potentially your fingers. Not cool. Sharp knives are way safer for that reason alone.

A DULL WILL NOT HURT YOU MORE. It's more like to cause an accident, but an accident with a sharp blade will cut right through you.
The wider model with two adjustment screws will give you more even slices.
Good video, thanks.

I wish I could see how you switch the blades
And use a cut-resistant glove always...
