Instant upma mix ! Just add hot water to it & upma is ready instantly.

2 tbsp Ghee
1 cup Sooji (pre roasted until fragrant)
3/4 tsp mustard seeds
1/2 tsp Urad Dal
Few Chana Dal (not the biggest fan, can totally avoid)
2 tbsp chopped cashew
7 to 8 curry leaves
Dried Onion (1 small)
1 tsp green chilli (dried)
1/2 tsp dried grated ginger
3/4 tsp salt
1 tsp sugar (optional)
1 tbsp chopped dried coriander
Just make sure the sooji is well roasted when added to ghee & masalas. This is an important step.
You have to mix it upma once you add hot water (the water has to be boiling & cover it immediately)

- Add the dried onion and immediately add sooji. Onion can otherwise get burnt. Or add it last to avoid burning
- Cool the mix & store in an air tight container
- If you take 1/2 cup Upma Mix, add a little more than double of the mark of upma level. You can add more to make it a little more moist or as you like.
