Omg. I want to throw blueberries in this, and instead of putting the lemon on top, swirl it in or put it inside somehow, with just a bit of maybe cream cheese. Only have almonds, which aren't doing it for me... might do the blueberry crumble topping I like... Ty! Needed to use my pint of blueberries, and was just going to make muffins. Second time around for me baking this delicious lemon streusel cake; once again, thanks for the recipe. Had a hard time finding pecan nuts, I live in a town in the South of France, even though I tried many stores. No bother, I used a mixture of hazelnuts and walnuts which is fine too. As for lemon curd, not every shop carries it but I did eventually find some in a big supermarket in the "Products of the World" section, bought 3 jars. Now, I found that the lemon curd didn't spread as well as yous did even though once measured into a bowl, I gave it a good whisk to relax it, make it less thick. Not to worry, it turned out fine the 1st time and have no doubt it'll be delicious when it's finished baking and given time to cool. If I can wait that long!! Couple friends coming round for coffee and 'fraid they won't be seeing a whole cake for I'll have already cut myself a slice, just to taste to see if it's good enough for them to eat, that's what I'll tell them anyway.
Are the metric measurements a Canadian influence when you lived here? Well I like that you give both imperial and metric measurements. I’m the generation that was initially taught imperial then that was immediately halted and metric took over at elementary school without any explanation!!
My go-to favorite cake recipe from you is an apple yogurt cake that has some almond flour in it. I’m curious to know why in this recipe you decided against using almond flour. Is there a texture difference that occurs with use of lemon curd? Would the cake get too soggy with almond flour and curd? Thanks for your always winning recipes.

I baked this yesterday as a birthday cake for a friend! I didn't have a 9" tin, so I used a 7" instead, with the extra batter into 3 muffins, so I get to sample it as well! I used walnuts for the streusel and cardamon instead of cinnamon. Walnuts are easier to get here than walnuts! The cake smells so good when it's done! Turned out beautifully and tastes even better! I'm going to make it again & again, with strawberry preserves and other variations! Thanks so much, Stephanie! Oh my, gotta make this, I actually home can lemon curd, NCHFP recipe, good for about 4 months on shelf, so always have some ready, this will be perfect to use up that last can. I was actually thinking raspberry preserves would be a really good alternative.
