Funny enough, that actually has happened to us , dry wall framers stepped on top of the stub out for the water line , dude snapped the stub out and flooded out the property .

The copper bullets that are above the waste line. They will get cut off and compression angle stops 1/2" by 3/8" will be installed after the wall is drywalled and painted. He'll slide on a 1/2"cts escutcheon first then the stop.
I ran apex only from the valve to the shower head. It was chewed by rodents and flooded the house. Yes it could happen to any of these new homes! Anything inside the walls is better with copper.

Um you can't solder after hooking up to pex, unless it's more then 18" away!

Why do you stub out copper?
So you don’t have ugly blue loose/wobbly pex coming out the wall
Should have copper ran every where and pex stub outs for easy service without having to solder under cabinets
I like to stub out with copper then use compression stops. Why? Looks better, is sturdier and compression stops are easy to change out.
If it’s under a sink idk why you would use copper
