  • Chef Sheldon Simeon of Tin Roof and Lineage shares a treat from his homeland of Hawaii: Mochiko Chicken. This fried chicken recipe is made with mochiko flour, a special rice flour made from sticky white rice, and is served with traditional (and mayo-heavy) Hawaiian macaroni salad.
    Sheldon starts by marinating boneless chicken thighs in batter made from sake, soy sauce, ginger, garlic, gochujang, sugar, eggs, and mochiko flour. Next, he prepares the macaroni salad, which requires perfectly overcooked elbow macaroni, diced boiled potatoes, chopped hard-boiled eggs, garlic salt, grated carrots, and a whole bowl of mayonnaise. After resting it, he dredges the marinated chicken thighs in all-purpose flour and deep fries it in canola oil until golden brown. Sheldon assembles the dish in a bowl with white rice, sliced fried chicken, and drizzles two sauces on top: su-miso and gochujang aioli. The bowl is topped with furikake (dry Japanese seasoning), kakimochi (soy glazed rice crackers), fried garlic, and green onions. Finally, Sheldon tops off the dish with a scoop of macaroni salad.

    “leave the skin on the chicken” - I remember watching a “healthy” TV cooking show and the guest chef was from Hawaii who was demonstrating a chicken recipe similar to the one on this RUclips channel. The chef also advocated leaving the skin on the chicken, but the cooking show host said for “healthier” eating the skin should be removed. The chef looked at the TV show host somewhat confused and shrugged his shoulder and said “OK, but it won’t be as good.”

      Is chicken skin really unhealthy? Near as I can tell, Americans obese because they cut out fat and then started guzzling sugar because everything started tasting like cardboard.

    I live in Hawaii so I've actually been to his restaurant in Maui a lot. It's a small little shop by the airport and everytime it's open, it's packed with people. The food there is great, perfect for lunch! Good to know the owner is such a cool wholesome guy. :)

    When I moved to Hawaii from the East coast I was freaking out because I couldn’t find Hellman’s mayo then (3 years later) someone told me that Hellmans is called Best foods west of the Rockies (including pac islands) and my heart was happy again

    Absolutely the best chicken. I tried this at Tin Roof in Maui with a six minute egg and it was delicious. Will go back to Maui just for this dish

    I made this for my brother, my partner and myself a few weeks back 😍 there are no words. The flavours, the textures, so much but all so balanced. It was a goddamn treat. Made it again a week later 🤣 my brother and my partner had their chicken with the aioli in brioche buns, my brother had all the fixings in there too. I just had it as per the recipe. And once again, blew us away
    Host is class too! Would love to one day visit his restaurant and personally thank him. We are the UK and honestly knew nothing about Hawaiian cuisine specifically, we are sold

Couldnt get the same furikake, or the crackers, could have ordered them online though, but I am in the UK and bought some rice crackers from an Asian supermarket and glazed them in soy and mirin and baked them 10 mins. I think everything else I did the same. We have mirin and gochujang etc in the house always tbh so it wasnt too bad. I am that kinda person who will try these things, wasnt difficult or complicated, can prep a lot of it ahead :)

    Had the pleasure of living in Hawaii for a year. We took the kids to Star Noodle for the first meal while visiting Maui and then went back for every other meal. This was during the time you were competing on TC but no one was allowed to talk about if you won or not. You are an amazing chef and I would give anything to be back.     I've had the pleasure of consuming this dish here in Japan, and the I can vouch for the Mochiko chicken by saying it was delicious. Since I have moved to Japan this dish along with a number of other delicacies here I consume on the regular. I will take my hand in trying to create this meal myself. Wonderful food.

    Love this!!!! Um im from hilo and the one thing we do is oyster chicken. From talking with folks is a Hilo things. Same idea if fried chicken but with a very rich gravy on top.

      From what i can tell its classic velveting style fry: coat chicken in egg white and corn starch.
      The question is the gravy. Brown gravy with hint of soy sauce and oyste sauce.
      If you ask even jn honolulu for oyster chicken and people give you a huh? Look. Same up here on the mainland.
      Hilo had a number of family owned spots that do it.
      I make my own version that my friends here like but its not the same.
      Gravy i make is typical chicken gravy, rouxe thickened, seasoned with soy sauce, garlic and ginger, and oyster sauce.
      Wish i had better info.

    I went to Maui for my honeymoon. Tin Roof was a random lunch spot we picked after the 5 hour flight from California. Best decision we made and by far the best food we had the whole trip, and it's not even close. This recipe seems a little over my skill level but I'm excited to give it a try. Can't wait to go back to Tin Roof.
