    Bruh this guy is a living legend. As an ilocano im so proud of him for introducing not just any filipino foods to Hawaii/world but also with its regional foods.

    i hail from the north of luzon Philippines and this is what I call comfort food so simple so organic and so awesome food I grew up with. Making me miss my mom up in heaven she cooked this the best!

    I use many Filipino ingredients when I make Italian food(Italy Italian - not American Italian)...like using bagoong alamang, bitter mellon aka amaplaya, malunggay, and patis...it really mixes well...my next challenge is to make Filipino food with Italian ingredients - which is a little bit harder...ciao!!!

      Try redwine adobo, with calabrian chili paste when you make the sofrito.
      Also Osso Buco Caldereta style (liver spread and cilantro) with Orange Juice and Zest

    Not one to comment, but this if by far my favorite feature on the Halo-Halo series. So great to watch from the brief history narration to the cooking and most especially the harvest. The Filipino Hawaiian heritage lives on.

    Francesca and Sheldon are two of my favorite Eater hosts. Great to see them together...in Maui. 👍 I can imagine the production meeting before this series. "Thinking about visiting Sheldon in Hawai'i. Anybody up for that?"

    When my father was sick he was bed ridden for a few weeks. He couldn't speak because he had a tube in his throat. His lips to point out the thinks he wants made every nurse and doctor laugh. One of the doctors has a Filipino wife. He understood my father

    GI (Genuine Ilokano) here and thanks Sheldon in continuing our traditional food. I miss katuday, I have not seen anything it here in San Diego but we are slowly obtaining all the Ilokano veggies that we need for our denengdeng.

    Both my paternal and maternal great grandfathers were Sakadas. My father's grandfather eventually moved to California and became a grape farmer, that's where he met his demise though. While my mother's paternal grandfather had a heart attack on the ship, while he was coming back to Ilocos to bring his family to Hawaii.

    Thank you to EATER for producing this video. Ched Sheldon's cuisine and heritage brings back memories of Good Old Hawaiian Plantation Days. I'm proud to be an Ilocano and am greatfull to my grandparents who were also Sakadas and who worked hard for us.

    Brings me home. Sugar cane is what brought my grandparents to Hawaii in pursuit of a better life. The sight of sugar cane growing, transports me to my childhood and these dishes warms my soul! Thank you Francesca!

    Chef Sheldon, I believe in your cooking! You have to have your own cooking show. It’s so clear that you have captured the very essence of pork adobo in the other show. Never had I ever experiment in putting coconut milk on adobo cause sour vinegar on milky coconut milk will just clash. Sour-milky mimics spoilage taste. In tinola yes, cause it compliments the ginger papaya dish. I hope you continue innovate more new Hawaiian-filipino dish.

    Just like how Filipinos were brought to Hawaii for sugarcane farming same way Indians were brought to Fiji islands. Up to 40% of fiji population are indians.

    Chef Sheldon should also look into the Laing recipes of the Philippines esp. the Tinumok variant. It's uniquely Filipino and traditional as well.

    ilocanos make up majority of the filipino population in hawaii. dont speak it but my grandparents do. born/growing up in hawaii and having the filipino culture is the best of both worlds!

    Filipino is a true ancient fusion in American influence is usually omitted or unaccredited. America bought the Philippines from the Spanish in 1898 so if anyone see hamburgers with different taste from the American one is not a modern fusion but American influence the good example is the beloved Filipino fast food Jollibee it is truly Filipino. Another influence that is not often mentioned is the Arab influence because Muslims are minority but a good example that is very popular Arab food in the Philippines is the Shawarma and kebab. Another thing is not mentioned is the inspiration of the popular Filipino dessert Halo-halo from the Japanese Ice shave snack Kakigori.
