Take enough milk for one portion only
Steam clockwise. You need see milk is spining around not bobling!
And now. Count to 9 maximum 10 second.

I've been struggling but I'll keep at it and try your tips some more....
The type and even brand of milk makes a difference. When I got my first real steam-wand machine (Silvia) I was doing great with the texture. Then it all went downhill and I just couldn't get it right. I was concerned my brand new machine was already clogging up or something, but realized it was a different brand. When I went back to my usual brand it was fine again. Both were full-cream milk (Devondale, which foams lovely, versus Dutch Lady, which tastes nice but just does not foam properly)

Thanks for the tips. Just received my Silvia today and tomorrow I should receive milk jugs and other accessories. Already got a pretty decent espresso shot out of it but still need to fine tune it a bit, thanks for the soap tip especially, I'll make sure to use that to practice with.
Just a friendly tip to anyone reading this and thinking about ordering a Silvia too. Buy a good 58mm tamper at the same time. The one that comes prepackaged with Silvia is total crap.
Other than that, it's a stellar machine.

Just got my DeLonghi Dedica Deluxe and have been trying to get nice milk for this. The wand has 2 settings hot milk and foam. Have been using the foam setting and when I pour the milk into the coffee the fist part just goes down into the coffee and what’s left just sits on top. 😩. Will be trying more with the other setting as haven’t been able to find the sweet spot yet but at least the lattes taste good! Haha. Good vid
Yeah sounds like that setting is creating to much foam. Try the other setting and see if you can lead the way a bit more on the milk.

Great video! I have been practicing and still haven’t been able to make a Rosetta with milk alternatives such as oat milk, almond and coconut milk. Do you have any suggestions to follow for the air injections? Timing or Temperature that works best?
s. corriene I’ve found that with alternative mills you have to pay a lot more attention to the aeration and then grooming before you pour (knocking it on the counter and swirling ) if you do it right it will have perfect micro foam! Also coconut milk for me is the hardest!

There is a slight evaporation in this particular device, so it takes time to get a result. And then fall into the problem of excessive fumigation Milk becomes no foam at all except hot milk What do you recommend? Is the method of water and soap effective to train on the right fumigation? thank you very much

1. is espresso quality and creamy presence an essential part to having milk eventually "floats" and being seen? asking about presence not taste though.
2. is there any saturation ratio point between milk and espresso where you decide it is time now to lower your jug and start pouring milk from lower distance and hence have milk show up with its beautiful shape? or it can be up to each one decision how much milk is enough and now we start shaping milk over the espresso?

Loved it! I still however wonder if it's me at fault or I'm being held back by the frothing wand in my espresso maker (Saeco Poemia, panarello taken off). I VERY rarely get creamy milk like in this video, and will most certainly attempt to add the techs. mentioned here.

Is all of the milk supposed to be foamy, or is it milk on the bottom and foam on top? I assume the latter because everything I've watched shows them pouring it in but nothing sticks to the top, then suddenly the design comes out by the foam sitting on the top. Do you need to pay attention when you pour for when the milk stops and the foam begins to come out?
Question: thanks for the video, I work in a commercial kitche. And our espresso machine has an automatic shut off on one side with thermometer for latte milk. Can I aerate the milk then let the auto take over or should I be monitoring the whole time? Also do you have any tips for cappuccino foam for best quality (small bubbles) and quantity?
If suspect you want to monitor the whole time but every auto steam is going to respond a little differently. If you can adjust the aeration one the auto wand (to less foam) you may be able to just let it do it’s thing.

I find just paying a bit closer attention to those noises and the swirl of the milk. Alt milks for sure aren’t as easy to work with but overall not to bad. Oat and almond are the easiest to steam 👍

Thanks for the vid man. Would it be possible to show over frothed or under frothed milk ? Its tricky when you dont have a reference.
Underfrothed will look like regular milk, over-frothed will have lots of bubbles and look like a blob of melted marshmellow

Lovely! At 3:40 in the video, the milk appears to roll over itself, causing bigger bubbles that continue to swirl on top of the milk until the steaming. Do you have any tips on avoiding this? Is it something else entirely? Especially with powerful steamers, and smaller drinks, I find this happens somewhat often.
alextraction if you can adjust the strength of the steam wand. It’s not bad ... you just don’t want it to get away on you. A few taps on the counter and some big swirls should pop those bubbles.
Can the keurig rivo create a similar texture as a steamer? I'm having trouble creating anything with it and I don't know if it's me or the machine..

Hi, I'm Sean and I have a question I hope you can help me answer. I'm a beginner barista, I'm practicing steaming milk now. (thanks bunches for this tutorial, it's really awesome!).
At times when I pour latte art, the milk bob can form firmly and beautifully in the centre so I can cut through to form a pattern, but at other times, when I pour the milk bob, the bob seperates and spreads out all over the crema - it cannot stay firm in place. I'm not sure why this happens, or what I'm doing wrong. Could it be that I didn't steam the milk well? Too little foam? Could you help me with this dilemma of mine? Thank you so much!!
Hey Sean! Sounds like your milk consistency is a bit different every time. Sometimes your getting really great latte art foam, then others it's too thin. Make sure you hear that nice hissing at the beginning of every steam. It's vital in the first few seconds. Practice makes perfect... but to me it sounds like your not getting enough incorporation of the steam into the milk sometimes. You'll get it after a few 100 lattes ;)
Thank you so much, Andrew! I will try to fix it when I'm on shift tonight. So the issue is that my steamed milk is too thin, right? But aren't lattes supposed to have a much thinner layer of foam? How do I know how much is enough? Hehe yeap! I might need to practice several hundred cups before I get the hang of it!

After the milks hit room temperature your shouldn’t here the tssst anymore . Only once in the beginning and it should be a 1-5 sec tssttt then no longer .
Great Video!! I have a Delonghi esam2600 which has a steam wand but they call it a milk frother - it’s a sleeve that goes over the black plastic steam wand... it froths the milk up but when I try to pour my latte art it sort of all comes out at the end as a big blob of foam! Any ideas what I’m doing wrong?
You will have a better time removing that black tip/sleeve by unscrewing it and then just following the directions in this vid. Youre getting too much air into the surface of the milk which is caused by the black tip

Afolz Capon Jizzle yes for sure! Sometimes nice to start on lower setting (less steam) but eventually work up to full steam.

Been trying to do art for couple weeks now and milk doesn’t seems to rise above the coffee for art. It just goes below t coffee. Suggestions ?
You'll need more foam in your milk. Steam a little higher at the start as Andrew explained in the video

My milk always end up real foamy. What I do wrong. Also, can art be done on a French press or is it only on Expresso coffee because of crema?
The crema is sort of what makes the latte art possible because its density holds the shape of the design you pour for latte art. With no surface tension on the coffee, the milk will spread out across the path of least resistance, which is everywhere. So, no, latte art isn't really doable with filter coffee.
