    Ingredients taken from website:
    2 c whole grain flour (1 c. whole wheat, 1 c. oat flour)
    1 tsp baking pwder
    ½ tsp baking soda
    1 tsp cinnamon
    ¼ tsp nutmeg
    3 brown-spotted bananas peeled and smashed (1 ¼ - 1 ½ cups)
    (although they use four in video)
    ¼ c 100% pure maple syrup
    ¼ c water
    2 Tbl unsweetened apple sauce
    1 Tbl vanilla extract
    1 tsp apple cider vinegar
    ½ c add-ins of your choice: walnuts, pistachios, raisins, nodairy chips

      Are you sure you don't have that backwards? It seems like it's usually the daughter saying "stop" and the mom acting like the obedient little girl. (But sneaks a walnut when Jane is not looking.) LOL. SO cute.

    FYI It’s delicious without the maple syrup, too, if anybody’s wanting to keep sugars lower! I add in ground flax and ground hemp hearts to make it a little more filling & get in my omega 3s, too!

    Just made this yesterday. I switched the flour to 2 cups of oat flour (which I blended from oat flakes) (I didn’t have whole wheat flour) and a half cup of coconut flour. I used a little walnuts and pistachio nuts. It was so good. Thanks for sharing.

    You two ladies are fabulous! If you wet the parchment paper and then wring it out it’ll easily and quickly go into any shape tin or container.

      dont need to wet it even. just screw it up in a tight ball. then unwrap it. goes into the cake tin & stays in place.

    Hello, I just made this recipe and it turned out great despite the fact that I did not have whole wheat flour I used instead 1 cup instead oats and 1cup cassava flour. Next, I did not have 3 medium spotted banans so I used 2 banana and 1 cup steamed pumpkin and no applesauce so I chopped up an apple. I also do not use sugar or maple syrup so I used 11 deglat dates and had to add more water. I believe that cooking involves a lot of improvising. Thanks again for another delicious recipe.

    So I went ahead and made this today. I used 4 bananas and no maple syrup. It's definitely sweet enough. I used all oat flour. I added butter flavoring and substituted 1 t pumpkin pie spice for the nutmeg and lemon juice for the apple cider vinegar. So it wouldn't be too gooey, I added 2T flax seed meal. My add-in was dried currents; they are tiny and you get a bit in every bite. Well, ladies, I haven't had sweet bread or anything cakey for years. These were worth waiting for. Thank you for all you do.

    Have all the cookbooks and Whole Food, Plant Based books from the Tribe. I put this video on Pause and went and made this wonderful Badass Banana Bread...Ann, I added the raisins along with chopped walnuts and garnished with walnut halves, in honor of you Jane, I am also an R.N. it's been out of the oven an hour....I ate a piece and Yum! I have to add, I love your kitchen...it's my kind of cozy kitchen and I enjoy your videos in a big way. And, I love how you both dress!!! Merry Christmas to you both and your wonderful family!!!

    This is truly fantastic and is not plagued by the "rubbery" crust common to most oil-free baked goods. My slight alteration: I substituted 2 medjool dates for the maple syrup. It provides the same level of sweetness with added fiber. I've made versions with raisins/walnuts, apricots/pecans and cranberry/orange peel. I also made your wonderful silken tofu mousse/frosting and flavored it with cranberries and orange peel and used it as a spread for the bread. Simply wonderful. Thanks for another great recipe.

    Lol, you ladies are a treat to watch! Love you both! It's four years later (2023), and I made the PB Woman Warrior book version. OMG! So very good! I made it with raisins, and since I had some pecans to use up, I finely chopped a small amount (I do that to use fewer nuts, but the pecan flavor is more distributed). I plan to have this for breakfasts this week. Thank you!!

      You need: 2 cups whole-grain flour (1 cup whole wheat and 1 cup oat flour)

      half a teaspoon baking soda
      1 teaspoon cinnamon
      quarter teaspoon nutmeg
      3 ripe bananas peeled and smashed
      quarter cup maple syrup
      quarter cup water
      2 tablespoons unsweetened applesauce
      1 tablespoon vanilla extract
      1 teaspoon apple cider vinegar
      one third cup walnuts, or pistachios, raisins, nondairy chocolate chips
      parchment paper and loaf pan; preheat oven to 400 Fahrenheit and bake for 30 minutes

    I used the recipe in the Prevent and Reverse Heart Disease Book (not cookbook). Made it into muffins. Had raisins, no nuts. They are wonderful!

    I put ripe bananas in the freezer until I have enough to bake bread with. Peel or not your choice. I sometimes thaw them out and put them in hot oatmeal and they blend right in to sweeten it up.

      I also place them in the freezer when they are way too ripened, but definitely without the peel because it's super hard to peel a frozen banana. :)

    I learned from a Laurel’s Kitchen recipe to squeeze lemon juice onto the mashed bananas. It adds another dimension of flavor.

    I put raisins in my banana bread on occasion. I like dark chocolate chunks too, but walnuts are my favorite.

      Im afraid when i make this i also will eat the whole batch, cause thats what i always have done with home baked goods but i havent been too naughty this past year so a few plant based treats this birthday / christmas month will be so satisfying and less guilt i imagine eating my own controlled ingredient sweets 😊

    Haha - my husband would totally agree - it needs raisins and lots of them. TIP - if you chop the raisins even your kids will love them. My grandson does NOT like raisins, but he loves anything with chopped raisins in it. They have a completely different taste and tecture.

    Question? What is the reason for walnuts not being "so plant perfect"? Curious?

      'Plant perfect' is Dr Esselstyn's diet for patients recovering from serious heart disease -- it's more because anything that impairs artery function, even a little, is a serious threat for them. The "Engine 2" recipes are for healthy plant-based recipes for the rest of us.

      I’ve never heard Esselstyn diet called plant perfect, it’s really just heart healthy perfect diet. Adding the word plant just adds confusion

      My understanding is that "plant perfect" does not include any nuts, because of the fat in nuts.

    Ann I hear ya... I too hate wasting the extra applesauce after the couple TBSP. I need is used. My solution... just eat the leftovers 😋
