For anyone who gets overwhelmed by the sweetness of sweet potatoes, I found bagged frozen riced sweet potatoes and mixed that with a can of no salt Rotel and a bag of frozen steamed rice and non-fat refried beans with taco seasonings. Tasted wonderful and it was very easy to control how much sweet potato to put in.
I so appreciate your time in making these plant based vegan videos for others to watch and learn from!!!!!!!!!!!!!!!!!!!!!! I have spent much of the last too days watching them. I ordered your cookbook you two are mainly cooking out of and one of Rip's last night!!!! I have a few more in my cart from your family. I do own a few already. I went full plant based vegan 18 days ago and feel amazing!!!! Wish I had done this long ago!!!! If you are someone on the fence just jump off even if you get a sliver it's well worth it!!! Give it one week at least!!! I never felt better, slept better, depression gone, grumpiness gone.... I am happy, full of joy, positive...can't wait to do things that I used to not bother with just because I didn't feel like it.... all that is gone.... plant based has sooooooooooo much to offer us in countless ways.... PLEASE TAKE THE TIME TO EDUCATE YOURSELF AND FIND THE TRUTH ABOUT HEALTHY EATING. YOU ARE WORTH THE BEST OF THE BEST!!!
Pamela Kelly I too went full on vegan 9 months ago after always resisting it because I needed “my fish and my dairy”. I have never felt better. I don’t follow the strict Dr Esselstyn way of eating. I enjoy nuts and avocados and nut butters in moderation. I’ve dropped 50 lbs without really trying but just eating healthy meals and moderate exercise. My knees no longer hurt and my ankles don’t swell. Healthy has never felt so good. Continued success to you! ❤️💪🏻🌱

These look great! For beans, I actually try to cook a bunch in my crockpot at the beginning of the week and then put them in the fridge in containers to add to my salads and meals the rest of the week. And I would definitely add kale to my "dilla".
I am getting a clearer idea of how important it is to mix lots of vegetables into the grains, and how to do that with every meal. I remember when quesadillas were just about a tortilla shell and cheese, and cooking in general was about some kind of starch and some kind of meat or cheese with some sauce or gravy. Thank you so much for your video.
I am in love with my Engine 2 cook book! As a bariatric patient I left the rice out of the "base' and it's so multipurpose. I LOVE that your recipes are quick, easy and flavorful.

made these yesterday for dinner. put the beans (made from dry) and brown rice in food processor with sweet potato because I was rushed for time. The consistency was thicker than dip. It came out a little bland. So added tamarind paste with garlic and onion powder. added roasted corn and spinach which were thawed from frozen. This came out tasty. I flipped them with a big spatula. Served with jar of salsa. I liked the way this came together from stuff I already had in the refrigerator.
Delicious!! Easy!! Fast!! I made these two days in a row...no rice and corn tortillas instead. Yum yum yum. Super easy fast lunch if you have precooked sweet potatoes laying around (which I batch cook, so yes, I do!) love you guys!!

This was delicious! I used what I had in the refrigerator so instead of the green onions I did add a little seasoning and used spinach. I did one on the stove top, one on the grill. Both came out great. I still had a lot of mixture left so this morning I made in the shape of a burger and put it in my air fryer for 370 for 15 minutes. Delicious. I might try making the "burger in the oven or stove top too! This mixture is so versatile. Thanks for the video and recipe.

suicune2001 please confirm whether or not you’ve had a farm fresh baked sweet potato. I ask this because I absolutely hated “yams” for years but my only exposure to them was canned yams! Or baked in butter and maple syrup. After having tried them plain I’m in love with them baked roasted grilled made into a soup etc!! I guess we all have things we like or don’t like but I love sweet potato and also Something about the sweet potato and retried beans together DELISH!!
@@dezo729 I get my sweet potatoes from the produce section so I guess that is farm fresh. I've never had it from a can as far as I know. I tried it with butter and garlic salt once and it didn't taste very good. If I slice it and bake it and then cover it in ketchup then I can tolerate it. Lol.

I have to say I am absolutely in love with this recipe and I rarely say that. I even decided to buy the Engine2 wraps and they make this recipe perfect. The wrap gets crispyish and isn't soggy at all. I have had it for 2 meals and can't wait to make it again! I have to say I made some vegan cheesy sauce for dipping but it is even great without it. Thanks so much!
I made these this week but I warmed the ingredients in a microwave while I cooked some no fat Mission yellow corn tortillas by themselves. Then I assembled it at the end.
I just got Rip's book "My beef with meat" from my local library! This recipe caught my eye & I made it for dinner! It was fantastic! I just left out the refried beans, the black beans were enough for me.🙂

Hi Jane If you can tell which brand nutritional yeast do you and your mom used in the cooking. Appreciate and thank you for the information. I throw out my fortified nutritional yeast, didn't know is not good for health. Also B12 which one is good. Thanks again

Your recipes look delicious. Thank you for all these videos. Sweet! Reminds me of my mom and myself, who now has passed away at age 88. Love your laughter...
I would add cumin and minced jalapeño to the mix. Not a fan of cilantro, but Rocket/Arugula would be awesome and lots of kale. I'd also sub a collard sprout leaf as the wrap. Yummy!

We call them beandillas, you can use any beans, even hummus, a bit of salsa, maybe avocado...some veggies...very yummy
I think I'd leave at rice, sweet potatoes, fat free refried beans and lots of veggies. Definitely would dip it in tomato salsa. That looks so good.
