  • My favorite way to store fresh eggs is to freeze-dry them. They look and smell like fresh eggs. But best of all they have the same texture and flavor as fresh eggs. Freeze drying raw eggs makes them shelf-stable, extending their shelf life for many years.
    In this video, we take our excess farm-fresh eggs, blend them, and then freeze-dry them raw. We also experiment with reconstituting the raw eggs. Ideally, 1 part freeze-dried eggs to 1 part water, or maybe a 1 to 1.5 ratio works best.
