Mix on low just to combine, then allow to sit to bloom for about 10 minutes. While waiting for the yeast to bloom, scald two cups of milk, and allow to cool. Add eggs, sugar and salt to the cooled milk and pour into the stand mixer. Whisk until combined. Add the cooled melted butter, then gradually add the flour. After the first two cups of flour, switch to the dough hook attachment (or paddle if you don't have that). The dough should be sticky, but pull away from the sides of the mixer when mixer. Cover with a towel and allow to rise for about 45 minutes or until doubled in size. While waiting for dough to rise, make the butter. Add all the ingredients into the bowl, then mix with egg beaters until thoroughly combined and whipped. Preheat the oven to 350°F. If doing both kinds of rolls, divide dough in half after punching it down. Punch down the dough, then knead on a floured work surface. Roll out into a rectangle about ½ inch thickness. Use a pizza cutter to cut off uneven sides, then cut into rectangles. Lay onto a greased or parchment paper lined baking sheet. Set in a warm spot to rise for 15 minutes. Using the other half of the dough, make Parker House style rolls. Pinch off pieces of dough, and put three each in a cupcake tin. Cover and allow to rise for about 15 minutes. Bake rectangular rolls for 15-20 minutes in a preheated 350°F oven, or until golden brown. After 15 minutes, take out of the oven and immediately brush with melted butter. Bake the Parker House style rolls for about 15 minutes in a preheated 350°F oven, or until golden brown. Brush with melted butter as soon as they come out of the oven. Serve warm and with cinnamon honey butter.
