How do I get a side view of the character? I just move to the side or up and down

You can rotate around the model by holding left click, panning around holding right click and zooming via mouse wheel.
Additionally you can also click on the arrows of the view cube on the top right :)

How do I stretch the point 1 of the body shape like you did ? because when I stretch my wireframe changes as well

Make sure to select only the curve point in the scene list at the left to edit it not the whole curve, union or area
