I hadn't really played video games (aside from a couple things on Wii) in a long time when Arkham Asylum came out and I actually bought an Xbox 360 just to play it. It was like nothing I'd ever played before. It was both welcoming to someone like me who didn't have much action game experience at the time, but it was also challenging enough to feel really satisfying.
I've probably played hundreds of action games since then, but the Arkham series remains one of my favorites, both because of the awesome combat and because it's the Batman game I think all of us had dreamed about for years. It's a great story too!

I don't know if it was but the Arkham Knight final Joker beatdown should have been made to last indefinitely.
It should have been programmed to only end once you put him in the door frame of the chamber for the beatdown. But before you do you should have been able to beat him up indefinitely.
I don't remember if you could or not. Could you. Or did he absolutely and irreversibly get put in the chamber doorframe after 2 or 3 hits? Seems like no one at all on RUclips has tried it.
And it probably shouldn't have been so easy. A lil more competitive.
Like have do at least a little more work to get Joker in that position to where you can beat him up all day.
Have Joker fire his lapel and pull out a knife or a crowbar or something. Have him try to stuff you in the chamber or throw you over the rail. Something.

Kinda like Spiderman does. A finisher meter or something.

Never understood why people thought this system was anything special it's literally a mash strike or other hits then when an enemy has a massive I'm going to hit you icon over them press the counter button in a like 2 second window and that's 99% of the combat. It's incredibly easy and offers no depth beyond recognizing a massively forgiving counter window that's hard to call a window when it's more like press it when you feel like it to never get hit button. It's about as braindead easy and linear as it gets basically press counter to win as it gets, when uncountable amounts of other action games offer so many more meaningful options and/or actually require some amount of mastery rather than as long as your not blackout drunk you can do it its amazing this is recognized as some standout compared to the slew of quality out there.

The combat is actually very deep than what you said. Sure you can just spam the punch button and occasionally press counter, but how about using different moves like stun, evade, special attack, throws, batarangs, batclaws, and ground takedowns? This is only from Arkham Asylum, which gets more expansive options in each game afterwards. That's the entire point of the combo system, where the higher your combo, and the unique moves you do, gives you more combo points.
The game is supposed to make you stylish and feel like Batman. It's like people playing Devil May Cry where you can spam the sword attack button with nothing else. Sure you can do that, but it would be fun to do so my stylishly. Both games have style points in their combat, encouraging you to do even more than what you have to.

As for the games I liked Asylum and Knight the best. Knight for me is a tad more enjoyable actually tries to add something to movement outside gliding and the grappling hook. Even pre Arkham games had Batwing and Batmobile segments to try and spice up combat. Not being able to control the Batwing and Batmobile is a nitpick I had with post Asylum games till Knight
