    Trimming beef cheeks is a real PITA but after this video I'm ready to do it again. Love the idea of using the good part for those burnt ends and the rest for barbacoa. I'll give this a go for sure.

    Rewatching this video after visiting the Leroy & Lewis food truck again last weekend, and I will also be one to claim that the smoked beef cheeks are even better than the fatty brisket, which is incredible.

      I must agree. Had a beef cheek comfit sandwich there with kimchi and it was out of this world. Super cool folks at L & L- they offered me a tour of their smokers which was really neat. Never had better bbq than L & L.

    Goodness these look amazing! When I ever visit Texas I need to hit up LeRoy and Lewis and try some beef cheeks! Unfortunately, where I am at...you don't really see "beef cheeks" anywhere, even at "bbq" places.

    Ox Cheeks is some of the greatest tasting beef ever!! Fact!!
    Not BBQ but ive slow cooked them, then pulled them and made a giant sausage and then used that as the core to a Beef Wellington instead of using a Fillet!!
    Flavour upgrade!!!

      Beef cheeks and short ribs are for me the best cuts for stews.
      I was actually planning to make Rendang again this weekend.

    Had to watch this again and I agree with you after I went to a new local BBQ joint here in AR....that Beef cheeks beat brisket. I mean that is hard to say...but maybe its true.

    Hmmmm. When you were talking about where to get this and that it was by the tongues and hooves and liver, it peaked my curiosity. Can you do anything with liver? Once I learned how to cook it correctly, not washing it and just frying it with onions and flour and salt and pepper it’s actually pretty good but that’s the only way I’ve ever cooked it, I’m wondering if there’s anything you can do on a grill or smoker with it. 🤔

    Looks delicious! Wondering if you had tried doing the cheeks fully smoked without doing the confit? I know you said they weren't tender yet, but is that because you broke them down into smaller cuts from the start? Great video!

      Use the fat from brisket trimmings to make your own. There are bunch of videos on RUclips showing how to do it.

    It's interesting how all the cuts that nobody wanted 20-30 years ago become delicacies now. In the Netherlands cod cheeks (batter dipped and fried) were common people food, but now they make it out of any white fish because it's become expensive.

    I’m new to smoking. This makes me think that if my brisket is at all dry it might not be that it’s over cooked, but maybe it’s that I didn’t cook it long enough (after it’s wrapped)...

    I notice you don't wash and dry off your meat. Sometimes I dont ans I dont notice a difference unless I want crispy skin on chicken. Then I always dry off as much as I can. Is there any reason to wash ribs, butt or cheeks since they smoke so long? Not trying to come at you, your food is amazing and your channel is now one of my favorites. Keep it up!!!
