    Hi Keith..to use a Chinese tenderiser put the meat in a dish and sprinkle bicarb of soda and a teaspoon of corn flour..leave for about 4 hours or overnight..this is called 'velveting'..then add the flavours..as you did..you are a fab cook..😉👍💐x

    Dont need the water when velveting, just the bicard will do. Or can add your soy etc same time. makes meat so much better when making Chinese food

    Keith, great recipe. Will be trying this one, thank you! If you like prawn crackers regularly, there’s a cheap way to get them. A Chinese wholesaler will sell you around a 1kg box of these. They’re dried, all you have to do is fry them up which takes seconds. Now, I last bought a box about 6 years ago, cost me about £6.00 from a shop in Banbury. They’re well worth it and very cost effective. 😊

    If you're making meat balls, burgers, kebabs, cevapcici or meat loaf etc add a wee bit of bicarb to the mince meat mix and leave in the fridge for 30mins before using. About 1/2 teaspoon to 500g of mince. Makes the finished product light and tender.
    Try it, you'll thank me one day! Ha!

    That looked spot on Keith, I much prefer the Goldfish brand to the Mayflower curry, paste is better than powder, in my opinion anyway, we had a takeaway from the Lombard last week and the special curry had no flavour and the sweet and sour chicken balls were burnt, not so good there anymore think I’ll be putting my order in with you instead cause I like your delivery guy 🤣 x x

      I agree re Goldfish brand concentrate - our local Chinese wholesaler told us long ago that it was used by takeaways. We've been using it for over 30 years.

    Looks really nice & when you factor in cost of living crisis this is great. Have you tried Mayflower chinese sauce? We normally use that & it's superb.
    Going to try the tesco 1 to see how it compares

    Hi Keith I’ve been using that paste for years it’s superb you could only get it from Chinese supermarket but now. I’ve seen it in big Tesco’s.please try Mae Ploy Thai curry paste red/green/yellow or pad. It amazing and simple.

    That looked lovely and worth every penny. i think some of the poor old takeaways are trying to cut corners to stay in profit/business but its lowering the quality of their products and us customers are noticing.

    Here in Scotland we have something called beef ham it's top side of beef but cut very thin and very tender it's excellent in a home made curry I have to watch the salt lots in the concentrate and stock and I can't get the fried rice as good as a carry out

    my local chinese does a happy meal starter choice of main huge choice full size trays for £8.20 much cheaper than a fish supper that looks just like a take away

    mayflower for me for a hurry curry but i do a good slow cooked beef short rib curry if i have the time also i love them prawn crackers you can buy that puff up in the oil works out well cheaper as the keep very well

    Buy some Li Kum Kee soy sauce (light and dark) for the egg fried rice and forget the oyster sauce. Also, buy jimmy's satay sauce to add a large teaspoon for 4 people into your satay and you'll be druelling!

    hi guys alan from scotland alright keith ,best curry sauce is youngs by far , wee tip when velveting meat after after marinating you have to rinse the bicard off the meat otherwise it wastes the overall final taste but good video kieth

    This is actually terrible, your beef strips are way to thick, you didn't prep the beef correctly, your loosing all the flavour of the beef you already tried to prepare by sloshing it around in liquid when you are trying to thicken the curry. The curry paste should have been made up before. You should have fried the onions and beef strips first. The MSG should have been added when you were frying the beef and onions. You should have added Garlic Powder to your beef prep, and more Dark Soy Sauce and less water. Other than all that, good job lol

      If you live near a good oriental supermarket that stock goldfish you'll get it in a Chinese hot curry sauce version, that's the Chinese curry version Keith is using . Tesco only do the Chinese version I normally make it in a small pan with hot water, just enough for a curry and it's only about 2 tablespoons. You can also get that paste in a madras and a garlic/chilli

    Now mate that’s my kind of meal have to try this you should try beef or chicken chow mein I usually use dryer noodles just soak in hot kettle water till soft then drain and fry
