    Enchiladas are usually softened in hot oil then dipped in the enchilada sauce then filled with a filling of your choice then covered in enchilada sauce baked then topped with cheese and baked until the cheese is melted

      The corn tortillas are usually cooked real quick in hot oil...not microwaved. And the white rice you have to toast in oil first for Mexican rice..😊

    It helps to keep the tortillas in a warm damp towel to keep them from cracking

      Im new to your channel and I'm really enjoying it. I have a couple of questions if you don'tmind. Everything looks delicious. The enchiladas looked great but compared to the restaurants we go to and also my own cooking, where was the cheese? Is it common in Montana to go so lightly with cheese? I thought the same on the amount of meat for a family of five. Oh my gosh, I'm a fat girl. 😂 I probably should try it your way. Maybe I would lose a few pounds. Lol

    the corn flakes make a great coating for oven fried chicken (use an egg wash to double bread them). I use them often and the crunch is amazing.

    That's the best way i know how to explain it w/o you actually hearing me.🤷🏻‍♀️ I'm Puerto Rican though not Mexican. You should try some PR dishes. It's not hard to make n full of flavors!! Completey different from Mexican cuisine but equally as delicious. Great job Mami.😊

    Corn tortillas lightly cook it in oil it's a little hot rolling them,but the flavor is so much better and they don't crack.

    suggestion for BBQ. on memorial day,i made a baked beans recipe i got from the channel SouthernFrugalMomma. however instead of using ground beef,i used diced ham,i also added in brown sugar bourbon seasoning packet and for the bbq sauce,i used famous dave's sweet and zesty. it was a huge hit. to find the video on her channel to see the actual recipe is easy since it was just last month. i think it was titled side dishes for memorial day. something like that,lol.

    Hi Mama B.!!! Everything you made looks delish. Look up on Google how to remove that white vein from the Chicken Tenders. I cannot stand that in my tenders. I always cut it out until I saw how to do it with a fork. Maybe you don't mind it in then tho. Anyways Spanish/Mexi is my second favorite kinds of food. I'll be making your recipes for sure. Never made frozen ice-cream.YUMS!!! Thank You for these yummy recipes...Great Video!!!...🦋

Looks delicious🎉 😋 Gotta have baked beans for that next feast you mentioned, I do a scratch made big batch in my Instapot with a leftover ham bone and then freeze it in portions for the summer, but even a doctored up can of Bush's is awesome 😁

    If you like Mexican food try watching ",views from the road., Mix up flour and water or cornstarch and water until it is like a thin glue. Use this around the edges of your tortillas and they will stay together just fine. You cant taste the mixture. The woman from views from the road She is fabulous, funny. She kind of reminds me of you just different cooking genres. It all looks so good. Ill be coming to Mt in late August during harvest IF and this is a my nephrologist says its fine.

    Every time I try to toss around food in the pan like you did with the fajita meat, I just very awesomely tossing the food on myself 😒I am coking for a while by now but I started to accept the fact I'll never succeed on that tossing movement 😆You did a great job!     Great job! I love watching you taste test the items. You always give an honest review. Like the taquitos might have been better fried in oil. But they looked fine from the air fryer, and probably less calories. We do our chips in the oven for the same reason. They turn out fine. Really good themed video. Thank you.

      Yes! Has mango, bell pepper, red onion, cilantro, jalapenos, salt, lime juice, and a little honey. Make it as spicy as you want :-). I could just eat it with a spoon, lollol.

    You soften corn totillas by putting in a small amount of oil flip over and drain on paper towels. Don't do too many ahead. If you use the yellow corn tortillas they are a little more firm. Hope you enjoy your feast. I live on the Texas New Mexico Border so Mexican Food is as common for us to make as American Food or Southern food (for me, that's where my family is from)

    Maybe spray the tacittoes with Pam, olive oil or avacodo spray... It might help it to have more of a fry??? Look's delicious regardless. I know I misspelled that 😅

    Heat your tortillas in Chef Mike for 30 sec in a paper towel and they will soften and roll better.

      Fabulous grocery store that has so many items you can buy in bulk!! Either fill a bag or bring your own mason jars, (have an empty so they can tare the scale at the register). Bulk items include spices, teas, candies, dehydrated fruits, grains, flours.... Fabulous, wonderful store!!!

      I'm brand loyal to Oreos and Reese's butt dollar tree has a vanilla wafer, but size that I absolutely love!! They are just a bit crisper, like nilla wafers were way back when. There is also a sugar free vanilla wafer in a white with blue bag that are also delicious.
